- 1 * 1 tablespoon grapeseed or canola oil
- 2 * 2 pounds boneless beef short ribs

- 1/2 * 1/2 carrot , cut into large dice
- 1/2 * 1/2 celery , cut into large dice
- 1/2 * 1/2 onion , cut into large dice
- 6 * 6 medium cloves garlic , cracked
- 1 * 1 cup red wine (such as Cabernet Sauvignon)

- 3 * 3 cups beef broth
- 1 * 1 loaf (2 pounds) sourdough bread , cut into 16 slices
- 12 * 12 ounces Bel Paese cheese , sliced thin
- 2 * 2 tablespoons plus 2 teaspoons Pickled Red Onions
- 4 * 4 teaspoons unsalted butter , room temperature
- 4 * 4 teaspoons grapeseed oil
- Sachet/Bouquet Garni
- 4 * 4 sprigs flat-leaf parsley
- 6 * 6 sprigs thyme
- 2 * 2 bay leaves
- 1 * 1 teaspoon peppercorns
- 1 * 1 leek , dark green top, cut into a 5-inch length, washed

- 8 ounces cooked elbow macaroni
- One 12-ounce can evaporated milk
- 1 1/2 cups whole milk
- 1/4 cup (1/2 stick ) of butter, melted
- 1 teaspoon salt
- Dash of pepper
- 2 large eggs, beaten
- Two 10-ounce bricks sharp Cheddar cheese, grated (about 5 cups)

- 4 Avocados
- 2 Limes, Juiced
- 1 Small yellow or red onion, diced
- 1 diced tomato
- 2 Tablespoons Fresh Cilantro, finely chopped
- 1 Teaspoon Coarse Salt or to taste

Habanero-Cilantro Pesto
