Pear and Spice Cake

Directions Poached Pears Peel the pears, leaving the stems in place and the pears whole

- 3 Bartlett pears, ripe but firm, with stems
- Juice of 1 lemon
- 4 cups water
- 1 cup sugar
- 1 cinnamon stick

- 3/4 cup unbleached all-purpose flour
- 1/2 cup ground almonds (see note)
- 1/2 teaspoon baking powder
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground star anise
- 1/4 teaspoon ground nutmeg
- 1 pinch ground cloves
- 1 pinch salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1 egg

Cherry Chocolate Pavlova

Heat oven to 140C/fan 120C/gas 1
- 6 large egg whites
- 300 g caster sugar
- 1 tbsp cornflour
- 2 tsp white wine vinegar
- 25 g cocoa powder
- 50 g finely chopped dark chocolate
- 284 ml pot double cream
- 3 tbsp icing sugar
- ½ 600g jar stoned cherry compote (I used Bonne Maman)

Rosemary and Sea Salt Pizza

- 5 ounces 1/8-inch-thick slices pancetta (Italian bacon; about 5 slices)
- 1/4 cup fresh lemon juice
- 1 tablespoon minced fresh rosemary
- 2 teaspoons finely grated lemon peel
- 1 garlic clove, pressed
- 2/3 cup olive oil
- 3 pounds Yukon Gold potatoes
