Cajun Jambalaya

This can be as spicy as you want and it has a great smokey flavor
- 3 Boneless Skinless Chicken Breasts
- 4 oz. sausage (I use Habanero)
- 1-2 teaspoon Cajun seasoning blend *recipe below)
- 1 can (14 oz) reduced-sodium chicken broth (omit if using instant rice)
- 3 tablespoons vegetable oil
- 1 large green bell pepper, chopped
- 6 green onions, chopped
- 3 large celery stalks, chopped
- 1 cup uncooked long grain rice or 2 cups instant rice
- 4 cups pinto cups
- 3 oz. Canadian bacon, diced (I use ham)
- 2 cups salsa, medium

- 1-3/4 cups (7 oz.) Sargento® Bistro® Blends Shredded Chipotle Cheddar Cheese, divided
- 1 jar (2 oz.) chopped pimiento, drained or 1/4 cup chopped, drained, bottled roasted red bell pepper
- 2 Tbsp. chopped cilantro or green onion tops
- 1 tsp. chili powder
- 1 tsp. ground cumin
- 1/2 tsp. garlic salt
Chicken Enchilada Casserole

In large saucepan, cook onion and green pepper in the 2 tablespoons of butter till tender
- 1 c. chopped onion
- 1/2 c. chopped bell pepper
- 2 tbsp. butter
- 2 c. chopped cooked chicken or turkey
- 4 oz. can green chili peppers, rinsed, seeded, and chopped
- 3 tbsp. butter
- 1/4 c. all-purpose flour
- 1 tsp. ground coriander seed
- 3/4 tsp. salt
- 2 1/2 c. chicken broth
- 1 c. sour cream
- 1 1/2 c. shredded Monterey Jack cheese (6 oz.)

- 2 1/4 cup flour
- 3 tsp sugar
- 2 tbsp. baking powder

- 1 tbsp ground cumin

Southwestern Chipotle Meatballs

- 1 pd. ground beef or turkey
- 2 serrano chiles, seeded and finely chopped (I include to add more heat)
- 1 onion, chopped
- 2 cloves garlic
- 1/2 cup breadcrumbs
- dash of worcestershire sauce
- 1 tsp. ground cumin
- Salt and pepper
- 4 oz. monterey jack cheese, cubed
- 2 tsp. extra virgin olive oil
- 1 28 oz. can diced tomatoes
- 1 green pepper, diced (optional)

- 2 Tbsp olive oil
- 2 teaspoons salt
- 1 teaspoon sugar
