Pulled Pork Potato Boats/Planks

For the Boats: Bake the potatoes in the oven or microwave, if you are in a hurry
- Pulled Pork Potato Boats or Planks
- 2 Large Baking Potatoes (I used Russets)
- 1 Tablespoon Olive or Grapeseed Oil
- 1 Large Garlic Clove, crushed (about 1/2 to 1 teaspoon of the jarred stuff)
- 1/4 Teaspoon Salt
- Pulled Pork (your favorite recipe or my easy recipe below)
- Sliced Black Olives, to garnish
- Easy Crockpot Pulled Pork
- 1-3/4 to 2 lbs Boneless Pork Loin
- 1 Small to Medium Onion (sweet white or yellow), sliced into small wedges
- 2 Tablespoons Worcestershire Sauce (Lea & Perrins is GF in the U.S., and I believe Edward & Sons is GF)
- 1 Quart (4 cups) Chicken Broth
- Water
- 1 Bottle of Your Favorite Barbecue Sauce (I used an 18-ouncer; choose your BBQ sauce wisely if you have free-from needs)
- Salt
- Pepper
Southern Green Beans (Family Fun)

Beans with Italian seasoning and mushrooms
- Ingredients
- 2 pounds fresh green beans
- 1 cup sliced fresh mushrooms
- 1/2 cup onions, diced
- 3 cloves garlic, minced
- 1/3 cup olive oil
- 18-ounce can water chestnuts, drained
- 1/2 teaspoon basil
- 1/2 teaspoon Italian seasoning
- Salt and pepper to taste
Gluten Free Waffles

- Ingredients
- 2 cups gluten-free flour (see note*)
- 1/2 teaspoon salt
- 3 teaspoons baking powder
- 1 1/2 cups milk, plus some
- 2 eggs
- 4 tablespoons butter, melted and cooled
- NOTE: My absolute favorite flour for waffles is"All-Purpose Celiac Flour" by Kinnikinnick (They are based in Canada. www. kinnikinnick. com) If ordering online isn't an option for you, try this flour
- 9 Use 2 cups for waffles.
Gluten-Free Granola Bars

- Gluten-Free Granola Bars
- 2 cups quinoa flakes (certified gluten-free oats would work too)
- 1 cup blanched almond meal
- 3/4 cup chopped dates
- 1/2 cup ground walnuts/cashews
- 1/2 tsp sea salt
- 1/2 tsp cinnamon
- 1/2 cup chopped pecans (any type of nuts would work)
- 1/2 cup melted coconut oil (sunflower oil or another oil would work here too)
- 1/2 cup honey (good honey, local honey if possible)
- 3 tbsp unsweetened apple sauce
- 2 tsp vanilla
- sesame seeds for sprinkling (optional)
Quinoa Date Squares from She Let Them Eat Cake

These gluten-free and dairy-free date squares make a great breakfast, or a powerful snack
- Quinoa Date Squares
- 1 cup water
- 1 small apple chopped (I used royal gala)
- 2 1/4 cups medjool dates (pit dates first)
- juice of 1/2 a lemon (2 tbsp lemon juice)
- 1/2 cup coconut oil (Annie’s recipe called for 3/4 cups butter)
- 1/2 cup maple syrup
- 1 tsp sea salt
- 1/2 cup almond flour (very finely ground almonds)
- 1/4 cup sorghum flour
- 1/2 cup quinoa flour
- 1/4 cup tapioca starch
- 2 1/2 cup quinoa flakes (Annie’s recipe called for rolled oats)
