Cashew Corn Chowder with Cilantro Cream

Directions: 1. Heat oil in a large pot over medium heat
- 1 Tbsp. coconut oil or ghee
- 2 medium yellow onions
- 6 cloves garlic
- 2 tsp. sea salt
- 2 tsp. turmeric
- 1 tsp. cumin

- 3 ears fresh corn
- 4 cups vegetable broth
- 1 Tbsp. freshly-squeezed lime juice
- 1/2 cup raw cashews, soaked overnight (4 hours minimum)
- Cilantro Cream
- 1/2 cup raw cashews, soaked overnight (4 hours minimum)
- 1 Tbsp. freshly-squeezed lime juice
- 1 cup cilantro (leaves only, loosely packed)
- 1/2 cup water
- 1 Tbsp. raw honey (or agave)
- 1 tsp. sea salt
- pinch cayenne, if desired

- Dry:
- 2 cups gluten free all purpose flour, I used Bob's red mill
- 1/2 cup oat flour
- 2 tsp baking powder
- 1/4 tsp salt
- 1/4 tsp pumpkin pie spice
- 3 tsp cinnamon
- 1/4 tsp cardamom (optional)
- Wet:
- 1-2 tablespoons maple syrup
- 1 Braeburn apple cored and cut into 1/2" pieces. 1 1/4 cup
- 1 Braeburn apple cored and coarsely grated. 1 cup packed
- 2 "vegan eggs": 2 tbsp flax seed meal with 5 tbsp hot water, mix and let stand at least 5 min.
- 1/2 cup coconut yogurt
- 1 1/2 tbsp melted coconut oil or vegan butter
- 1/4 tsp vanilla extract
- 1 cup almond milk unsweetened
- 1 cup whole frozen cranberries + 2 tbsp maple syrup

1. In a large soup pot heat olive oil
- Toppings:
- 1 T olive oil
- 1 yellow onion, chopped
- 3 cloves garlic, minced
- 1 green pepper, chopped
- 2 cups sweet corn (ours was frozen, no need to thaw)
- 1 small jalepeno, minced
- 1 can diced green chiles
- 4 cans diced tomatoes (I use low sodium)
- 4 cans black beans, rinsed and drained (I use low sodium)
- 3 cans vegetable broth (I use low sodium)
- 2 T chile powder
- 1 1/2 T cumin
- 1 bunch cilantro, chopped
- Salt and pepper, to taste
- Juice from 1 lime
- Tortilla strips
- Pepper Jack cheese
- Avocado slices
- Cilantro
- Lime wedges
Vegan Egg Muffins

mix all dry ingredients add water add veggies spray muffin pan with oil add batter bake 375 30-40 minutes

Roasted Cauliflower + Onion Soup

Preheat the oven to 400 degrees F
- soup:
- 1 large head of cauliflower, trimmed
- 1 lb yukon gold potatoes, scrubbed (I use yukon because of the waxy/creamy quality)
- 2 cooking onions, papery skin removed
- 1 sprig of fresh rosemary (mine was particularly lush, so perhaps 2 normal sprigs is advisable)
- 2 tbsp oil
- salt and pepper
- juice of 1/3 of a lemon (like 2 teaspoons)
- 5-6 cups vegetable stock
- optional toppin’s:
- some kind of flavourful oil (truffle, extra virgin olive, walnut etc)
- croutons
- toasted + chopped nuts
- chopped leafy herbs
- balsamic reduction
- squeezes of lemon
- sriracha
- flaky sea salt or fresh pepper
Creamy No Bake Pumpkin Pie

To make the filling, place all dry ingredients in a saucepan and whisk to combine
- CRUST
- 2 2 2 cups pitted dates (deglet nour or medjool)
- 2 2 2 cups raw nuts (I used half pecans, half almonds)
- 1/4 1/4 1/4 cup gluten free oats (or sub unsweetened coconut flakes for a different flavor)
- 1/2 1/2 1/2 tsp pumpkin pie spice
- PUMPKIN FILLING
- 1 1 1 cup pumpkin puree
- 3.5 3.5 3.5 Tbsp cornstarch
- 1/3 1/3 1/3 cup sugar (raw or granulated)
- 1/2 1/2 1/2 tsp pumpkin pie spice
- pinch pinch sea salt
- 1 2/3 1 2/3 2/3 cup unsweetened milk (any kind, though I'd recommend almond or dairy)
- 1/2 1/2 1/2 tsp vanilla extract
- COCONUT WHIPPED CREAM
- 1 13.5 1 13.5 1 13.5 ounce can full fat coconut milk chilled overnight (I recommend Thai Kitchen brand)
- 2-5 2-5 2-5 Tbsp powdered sugar, depending on preferred sweetness
- 1/2 1/2 1/2 tsp pure vanilla extract
