Grilled potatoes with Lemon Herb Dressing

Place the potatoes in a large pot and cover with cold water
- Lemon Herb Dressing:
- 1.5 pounds baby white potatoes
- Olive oil
- Salt
- Pepper
- 1 cup fresh cilantro leaves
- 1 cup fresh Italian parsley leaves
- 2 whole green onions, roughly chopped
- 2 cloves garlic, minced
- 6 tablespoons fresh lemon juice, about 2 lemons
- 6 tablespoons olive oil
- 1 teaspoon salt
- 1/4 teaspoon black pepper
Smokey Black Bean Beet Burgers

Heat a large skillet over medium-low heat and add some nonstick spray or a bit of olive oil
- 3/4 3/4 3/4 cup cooked quinoa
- 1/2 1/2 1/2 large red onion, finely diced (~3/4 cup)
- 1 1 1 cup finely chopped mushrooms (shitake, baby bella or white button)
- Salt & Pepper
- 1 15-ounce 1 15-ounce 15-ounce can black beans, well rinsed and drained

- 1/2 1/2 1/2 tsp chili powder (or sub extra cumin)
- 1/4 1/4 1/4 tsp smoked paprika
- ~1/2 cup raw walnuts, crushed or ground into a loose meal

- 1 Bay Leaf
- 1/2 teaspoon Dried Thyme
- 1/2 Cup Raw Cashews
- Salt and Pepper to Taste

- 3/4 c.+ 1 Tbsp. unsweetened nondairy milk
- 2 tsp. apple cider vinegar
- 2 tsp. nutritional yeast (optional)
- 1/4 tsp. turmeric powder
- 1/4 tsp. garlic powder
- 1/4 tsp. onion powder
- 1/4 tsp. baking soda
- 1/8-1/4 tsp. sea salt to taste
- Stuffing options
- 1/4 of a red onion, chopped
- 2 garlic cloves, minced
- 1/4 c. tomatoes, chopped
- 1/4 c. small broccoli florets
- 1 Tbsp. cilantro
Sugar Cookies

In a large bowl, cream together butter and sugar until smooth
- 1 1/2 cups vegan butter, softened
- 2 cups white sugar
- 4 eggs
- 1 teaspoon vanilla extract
- 5 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- you can add 1 cup of sugar and 1tsp vanilla for more flavor. cooking is still the same.
