- 2 small or 1 large fresh poblano chiles
- 1 small head cauliflower, cored and cut into rough 1-inch chunks
- Salt and freshly ground black pepper to taste
- 3 tablespoons olive oil, plus more for cooking quesadillas
- 3 scallions, thinly sliced
- 1 tablespoon lime juice
- 2 cups (about 8 ounces) coarsely grated vegan monterey jack cheese
- 12 small (7-inch) flour tortillas
- Cumin-Lime Crema
- 1 cup cashews soaked for at least 4 hours
- A few gratings fresh lime zest
- 1 tablespoon freshly squeezed lime juice
- 1/2 teaspoon ground cumin
- Pinch of salt
- water until desired consistency
- Lazy Taco Slaw
- 1 bag coleslaw mix or (as used here) 3 cups finely shredded red cabbage and 1 coarsely grated carrot
- Coarse salt
- Juice of half a lime

- 1 Cup Whole Wheat Pastry Flour *note: I used stone ground, if you find the dough to be a little too "wet" add an additional 1/4 - 1/2 cup of flour

- 1/2 cup peanut butter
- 1/2 cup agave
- 1 flax egg (1 tbsp flax + 3 tbsp warm water)
- 1/2 tsp pure vanilla extract

Chickpea flour veggie omelet

In a bowl, mix all dry ingredients
- Wet :
- 1 cup chickpea flour (I use Bobs Red Mill Chickpea/Garbanzo Bean Flour)
- 1 Tablespoon flaxseed meal or chia seed meal
- 1/2 tsp salt
- 1/4 tsp each of turmeric, garlic powder, kala namak(Indian black salt), baking soda, cumin powder
- 3 Tbsp non dairy plain yogurt(unsweetened or lightly sweetened, I used unsweetened So Delicious coconut milk yogurt)
- 1 1/4 cup water
- Veggies :
- tomato slices
- red onion slices
- raw jalapeno slices or pickled jalapeno slices
- chopped cilantro (optional)
- Variations: Add 1 to 2 Tbsp nutritional yeast for cheesy flavor. Add 1/4 tsp carom seeds/ajwain for Indian Chilla flavor. Add chopped cilantro and veggies to the batter.

Tofu Ricotta with a butternut sage sauce

Bring a large pot of salted water to a boil and add the jumbo shells
- Tofu Ricotta:
- 12 ounces jumbo shells
- 1/4 cup toasted pecans, finely chopped
- 1 lb. package extra firm tofu, drained and rinsed
- 1 tablespoon extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon nutritional yeast
- 1 teaspoon dried parsley
- 1/2 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- Butternut Sage Sauce:
- 1 tablespoons olive oil
- 1 tablespoon finely chopped fresh sage
- 3 cups peeled, seeded and diced butternut squash
- 1 medium yellow onion, finely chopped
- 3 garlic cloves, chopped
- 1/8 teaspoon red pepper flakes
- 2 cups vegetable broth

- For the Apples
- 6 apples (2 tart, 4 sweet) peeled and cubed
- 2 Tbsp vegan butter or olive oil

- 2 Tbsp vegan butter, melted (or sub canola, grapeseed or coconut oil)

- 1/4 cup brown sugar
- 2 tsp cinnamon
- 1/2 tsp salt

- 2 cup whole wheat flour

1. In a medium sauce pan, combine the quinoa and water
- 1/2 cup quinoa, rinsed
- 1 cup water
- 1 tablespoon olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 jalapeno pepper, diced
- 1 large carrot, peeled and chopped
- 2 celery stalks, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 medium zucchini, chopped
- 2 (15 ounce) cans black beans, drained and rinsed
- 1 (15 ounce) can red kidney beans, drained and rinsed
- 3 (15 ounce) cans diced tomatoes
- 1 (15 ounce) can tomato sauce
- 2-3 tablespoons chili powder, depending on your taste (we used 3)
- 1 tablespoon ground cumin
- Salt and black pepper, to taste
- Optional toppings: green onions, avocado slices, chips, crackers, etc.
