Salad: Deconstructed Bahn-Mi Salad

The bahn-mi sandwich reconfigured for the salad bowl makes a luscious lunch or light dinner
- 1 tablespoon neutral vegetable oil
- 8 ounces seitan or extra-firm tofu, thinly sliced (or reconstituted Soy Curls)
- 2 garlic cloves, minced
- 1 1/2 teaspoons grated fresh ginger
- 3 tablespoons soy sauce
- 2 tablespoons hoisin sauce
- 2 teaspoons sriracha sauce
- 1 teaspoon sugar
- 2 tablespoons rice wine vinegar
- 3 cups finely shredded cabbage or Romaine lettuce
- 1 large carrot, shredded
- 1/2 English cucumber, peeled, seeded and chopped
- 1 cup fresh cilantro leaves
- 1/4 cup minced scallions
- 1/2 French baguette, cut diagonally into 1/2-inch slices
- Vegan mayonnaise (with a little sriracha added, if desired)

- Ingredients:
- SOUP
- 1 whole chicken
- 3 carrots
- 3 zucchini
- 3 celery sticks
- 3 small onions
- 2 small parsnips
- salt and pepper to taste
- chicken soup powder to taste
- MATZO BALLS
- 4 eggs, separated
- 4 Tbsp. water
- 4 Tbsp. oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup matzoh meal

Sift the flour, baking soda, cinnamon, nutmeg and salt into a medium bowl, set aside
- 1 1/4 cup white whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon fine salt
- 1/2 teaspoon powdered cinnamon
- 1/2 teaspoon ground nutmeg
- 1 tablespoon orange zest
- 1/3 cup chopped dried cranberries
- 1 cup turbinado sugar
- 2 large eggs
- 1/2 extra light olive oil
- 1 cup canned pumpkin puree

Combine all the ingredients except the chocolate in a food processor or blender and transfer to a medium size bowl
- 1.5 cups chickpeas (1 can or 250g)
- 3 Tbs Agave Nectar or some other kind of sweetener (add more if the dough is not sweet enough for you)
- 1/8 tsp baking soda
- 3 Tbs nut butter (I used tahini)
- 2 tsp vanilla extract
- Pinch of salt
- 0.5 lb (2 bars) semisweet baking chocolate

Pour tomatoes into a large bowl and crush with your hands
- DIENTS
- 1 28-ounce can whole San Marzano tomatoes, certified D.O.P. if possible
- 1/4 cup extra-virgin olive oil
- 7 garlic cloves, peeled and slivered
- Small dried whole chile, or pinch crushed red pepper flakes
- 1 teaspoon kosher salt
- 1 large fresh basil sprig, or 1/4 teaspoon dried oregano, more to taste
SIMPLE GARLIC OIL & CRUSHED RED PEPPER CAPELLINI WITH GRILLED SHRIMP

Toss the shrimp in 1/4 cup of the garlic oil and 1/2 tsp of salt
- 1 pound dried pasta
- 3/4 cup garlic olive oil
- 2 TBSP olive oil
- 1/4 cup finely chopped onion
- 1 clove garlic, minced
- 1/4 cup pasta cooking water
- 1/2 teaspoon crushed red pepper flakes
- 1 1/4 teaspoons kosher salt
- 1/4 tsp pepper
- 1 cup fresh flat-leaf parsley, roughly chopped
- 1 lb of shrimp, peeled and deveined
Vegan Egg Sub

Instead of 1 egg in baking, you can use
- nstead of 1 egg in baking, you can use...
- 1 T Flax seeds ground with 3 T water
- 1 Tablespoon (chick pea) or soya flour and 1 T water
- 1 T arrowroot, 1 T soy flour and 2 T water
- 2 T Cornstarch
- 2 T Potato starch (Instant mash potatoes)
- 2 Tbsp flour, 1/2 Tbsp shortening, 1/2 tsp baking powder and
- 2 tsp water
- 1/4 cup soft tofu blended with the liquid portion of the recipe
- 1/2 large banana, mashed
- 2 Heaping t Soy powder + 2 T water
- 1/4 cup apple sauce (in sweet recipes)
- I usually use 1 T ground flax seed, 1 T cornstarch, 1 T oil
- plus 2 T water or soymilk, in place of 1 egg
- and have had no problems yet!
- I adjust to the recipe... If it has more than 2 eggs I add baking powder.
- If you don't want the flax seeds, say
- in a smooth batter white bread cake, then use something else..
