Caesar Salad

Cook bacon until crispy and set aside
- Season with:
- 2 heads romaine lettuce
- 1/2 lb bacon
- 1 cup small bread croutons
- 6 tbsp salad oil
- 2 tbsp vinegar
- 2 tbsp extra-virgin olive oil
- 1 tbsp lemon juice
- 1 tsp salt
- 3/4 cup parmesan cheese
- sugar, pepper, dry mustard, tarragon
- Dash of tabasco, worchestershire sauce
- 1 tsp parsley
- 1 tsp garlic, finely chopped
- 1 raw egg
Beef Manicotti

Beef Manicotti: Cook and stir ground beef and onion until beef is brown
- Sauce:
- 1 lb. ground beef
- 1 small onion, chopped
- 3 slices bread, torn into small pieces
- 1 1/2 cups shredded mozarella cheese
- 1 egg
- 1/2 cup milk
- 1 tbsp snipped parsley
- 1 tsp salt
- 1/4 tsp pepper
- 1 4oz can mushroom stems and pieces
- 15 oz. tomato sauce
- 12 oz. tomato paste
- 1 small onion
- 1 clove garlic, finely chopped
- 4 cups water
- 1 tbsp italian seasoning
- 1/2 tsp sugar
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/3 cup grated parmesan cheese
Lemon Mint Pork Tenderloin

In large bowl. whish together lemon rind and juice, oil, honey, mint and garlic
- 1 tbsp grated lemon rind
- 3 tbsp lemon juice
- 3 tbsp extra-virgin olive oil
- 3 tbsp liquid honey
- 1 tbsp chopped fresh mint
- 1 clove garlic, minced
- 2 pork tenderloins (each about 12 oz)
- 1/4 tsp salt
- 1/4 tsp pepper
Easy Blender Hollandaise Sauce

1 Melt the butter slowly in a small pot
- •3 egg yolks (see how to separate eggs)
- •1 tbsp lemon juice
- •1/2 tsp salt
- •1/8 tsp cayenne (optional)
- •10 tbsp unsalted butter (if using salted butter, skip the added salt)
Strawberry Delight

First grease the bottom and sides of 9X13 container and then line bottom with 3/4 of crushed oreos
- 1 pkg oreo cookies
- 3/4 cup butter
- 1 cup fruit sugar
- 1/2 tsp almond extract
- 2 eggs, separated
- 2 - 12 oz. frozen strawberries
- 1/2 cup crushed walnuts
- 1 1/2 cups whip cream
Meatloaf

Preheat oven to 350F. Mix together meatloaf ingredients until just combined
- Meatloaf:
- 1 1/2 pounds ground beef
- 3/4 cup rolled oats
- 1/4 chopped onion
- 1 1/2 teaspoons salt
- 1 egg, beaten
- 3/4 cup milk
- Sauce:
- 3/4 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon yellow mustard
Ham with Beer Glaze

Place ham in a roasting pan
- Beer Glaze:
- 1 fully cooked ham, about 3-4 pounds
- 1 cup beer
- 1 cup brown sugar
- 1 tbsp flour
- 1 tsp dry mustard
- 2 tbsp red wine vinegar

- 1/2 tsp ground coriander
- 1/2 tsp cumin
- 1/4 tsp cayenne pepper
- 1/4 tsp salt
- 2 skinless trout fillets (1 1/2 lbs)
- Lemon wedges
- 3 tbsp extra-virgin olive oil
- 1 cup diced leek (white and light green parts only)
- 1/2 cup diced celery
- 1/2 cup diced carrot
- 1 clove garlic, minced
- 1/2 tsp ground coriander
- 1/2 tsp cumin
- 1/2 tsp salt
- 1 cup dried green lentils
- 1/4 cup minced fresh celery leaves and/or coriander leaves
- 3 tbsp lemon juice
Marmalade-Glazed Chicken Thighs
