Classic Cream Scones

- 2 c all purpose flour
- 2 tsp baking powder
- 1/8 tsp salt
- 1/4 c sugar
- 1/3 cup butter, cubed
- 1/2 c whipping cream
- 1 large egg
- 1 1/2 tsp vanilla extract
- 1 egg white
- 1 tsp water
- sugar
Lime Cream Sauce

Great served over grilled chicken
- 1 c light sour cream
- 1 T lime zest
- 2 T fresh lime juice
- 1/2 t salt
- 1/2 t ground cumin
- 1/4 t ground pepper
Green Bean Bake

Use frozen if fresh isn't available
- 1 # green beans, fresh, trimmed
- 2 small purple onions, chopped
- 1 tbs evoo
- 1 tbs brown sugar
- 2 tbs butter
- 2 tbs all purpose flour
- 2 c milk
- 1/2 c parmesan cheese, grated
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 c slivered almonds
Chicken Marsala

If skinless, boneless chicken is used serve with garlic smashed potatoes
- 1/4 c onion, diced
- 1/2 c celery, diced
- 1 c mushrooms, sliced
- 2 tbs butter
- 2 c chicken, cooked and diced, in bite size pieces
- 1/4 tsp sage
- 1/2 c Marsala wine
- 1 1/4 c heavy whipping cream
- 1 tbs flour
- 1/4 tsp pepper
- 1/4 tsp salt
- cooked wide egg noodles
- parsley
Mexi-Chili Casserole

Brown meat, drain. Rinse beans
- 1 # ground beef
- 1 # can kidney beans or black beans
- 1 can Old ElPaso Enchilada sauce, mild
- 1 80z can tomato sauce
- 1 can whole kernel corn
- 1 can sliced black olives
- 1 tbs minced onion
- 1 small pico de gallo, Fresh in produce
- section
- 2 c shredded mexican cheese
- 2 c fritos corn chips
- 1 1/2 c sour cream
Savory Squash Casserole

Cook squash and onion in boiling water to cover for 20 minutes
- 10-12 large yellow squash, sliced
- 1 large onion, sliced
- 1 (8oz) carton sour cream
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 1/2 c cheddar cheese, shredded
- 2 c cornflakes or Ritz crackers, crushed
- 3 tbs butter, melted
Sugar Snap-Snow Pea Salad

Arrange sugar peas and snap peas in a steamer and steam 1-2 minutes or until crisp-tender
- 1 1/2 c sugar snap peas, fresh trimmed
- 1 1/2 c snow peas, fresh, trimmed
- 1 tbs soy sauce
- 1 tbs cranberry juice (or pomegranate)
- 1 tbs white vinegar
- 1 tbs canola oil
- 2 tsp ginger, fresh, minced
- 1 tsp sugar
- 1 tbs sesame seed
- 1 c frozen baby English peas, thawed
Broccoli Salad

Tear broccoli into tiny "trees" also use tender parts of stem chopped into small pieces
- 1 bunch broccoli
- 1 pkg sharp cheese
- 1 red onion, chopped
- 2 tbs vinegar
- 1 c mayonnaise
- 1 # bacon, cooked and crumbled
- 1/4-1/2 c sugar
Almond Mushroom Sauce

Serve w/ steak
- 1 pkg slivered almonds
- 1 can cream of mushroom soup
- milk, thin to desired thickness
Marinated Carrots

5 c carrots, sliced into thin coins 1 medium sweet onion 1/2 c evoo 3/4 c vinegar 1 tsp worcestershire sauce t
- Cook carrots, drain and cool.
- Cut onion and pepper, mix with carrots.
- In separate bowl mix other ingredients. Pour over carrots, onions and peppers.
- Marinate 12 hours. Drain from juice to serve.
