- 1 roasted red pepper, diced
- olive oil, for sauteing
- sea or Kosher salt and fresh black pepper
- 1 pound Italian sausage, ground or removed from casings, hot or sweet
- 4 cloves, garlic, minced
- 1 teaspoon dried basil, crushed between fingers
- 32 ounces low-sodium chicken broth
- 1 pound gnocchi
- 2 cups fresh baby spinach leaves, rough chopped
- 3/4 cup half & half or heavy cream (light is ok)
- 1 heaping tablespoon fresh basil, chopped
- Parmesan cheese, fresh grated, for serving
Lemon Quinoa Salad with Pistachios & Sun-Dried Tomatoes

1. in a medium saucepan, combine the quinoa and water
- 1 cup quinoa
- 2 cups water
- 1 1/2 oz. sun-dried tomatoes (not packed in oil), sliced (about 1/2 cup)
- 1/4 cup shelled & chopped pistachios
- 1/4 cup chopped flat-leaf parsley
- 1 1/2 tbsp fresh lemon juice
- 2 tbsp extra-virgin olive oil
- 1/2 tsp agave nectar or honey
- 1/8 tsp salt
- 1/8 tsp ground pepper
Southern Style Hushpuppies

1. In large mixing bowl, mix together flour and cornmeal
- 3/4 c self rising flour
- 1 c self rising corn meal (not mix)
- 1 large egg, lightly beaten
- 1 small onion, finely minced (i use sweet onion)
- 1 pinch garlic powder
- 1 pinch onion powder
- 1 pinch old bay seasoning
- 1 Tbsp sugar
- 3/4 to 1 c buttermilk
- canola oil for frying
Reuben Soup

Melt the butter in a large sauce pan over medium heat, add the onion and saute until tender, about 5-7 minutes
- 3 tablespoons butter
- 1 onion, diced
- 2 cloves garlic, chopped
- 1/2 teaspoon red pepper flakes, or to taste
- 1/4 cup flour (or rice flour for gluten-free)
- 4 cups chicken broth or chicken stock
- 1 cup cooked corned beef, shredded or cut into bite sized pieces
- 1 cup sauerkraut, drained
- 2 medium Yukon Gold potatoes, peeled and cut into bite sized pieces
- 1 tablespoon Worcestershire sauce
- 1 teaspoon pickling spices
- 1/4 teaspoon caraway seeds
- 2 bay leaves
- 1/2 cup heavy cream
- 4 slices dark rye, lightly toasted
- 2 cups swiss cheese, shredded

- 1 tlbsp balsamic vinegar
- 1 tblsp dijon mustard
- 1 clove garlic
- splash of worcestershire sauce
- 1 tlbsp salt
- pepper
- 1 tsp salt
- 1 tsp oregano
Tomato Basil Parmesan Soup

Heat oil in 4 quart soup pot
- 3 cups diced tomatoes with juice (you can use canned)
- 1 cup finely diced celery
- 1 cup finely diced carrots
- 1 cup finely diced onions
- 1 Tbsp fresh oregano or 1 tsp dried
- 4 cups chicken broth
- 1/2 cup flour
- 1 cup parmesan cheese, freshly grated
- 1/4 tsp black pepper
- 1/4 cup vegetable oil
- 1 cup finely diced onions
- 4 Tbsp fresh basil or 1 Tbsp dried
- 3 bay leaves
- 1/2 cup butter
- 2 cups half and half, warmed
- 1 tsp salt
Tuan & White Bean Salad

- 1 medium garlic clove
- 1 tbsp fresh lemon juice
- 1/8 tsp salt
- 1/8 tsp pepper
- 2 tbsp olive oil
- 1/2 med red pepper, finely chopped
- 1/4 cup red onion
- 1 16 oz cannellini beans, drained and rinsed
- 1 5 oz can chunk white tuna, packed in water; drain
- fresh basil, chopped to taste
- 1/2 tbsp lemon zest
Marinated Cheese

Whisk together first 6 ingredients and set aside
- 1 (0.7 oz.) envelope Italian dressing mix
- 1/2 cup olive oil
- 1/4 cup white vinegar
- 2 T minced green onion
- 2 T water
- 1 1/2 tsp sugar
- 1 8 oz. block Monterey Jack cheese, chilled
- 1 8 oz. block Cheddar cheese, chilled
- 1 8 oz. pkg Cream cheese, chilled
Black Bean Dip

Drain and mash black beans, leaving some whole
- 2 cans black beans
- 1 can chopped green chiles
- 16 oz jar salsa
- 8 oz sour cream
- green onions
- 12 oz mexican-type cheese, shredded
Oriental Slaw

Cook sesame seeds and almonds in 450 degree oven to brown
- Salad:
- Small bag slaw mix
- 1 large bunch green onions
- 1 package beef ramen soup
- 2 T sesame seed
- small bag slice almonds
- Dressing:
- 1 tsp salt
- 1/2 tsp pepper
- seasoning packet from soup mix
- 1/3 cup sugar
- 1/2 cup oil
- 3 T red wine vinegar
