Mandarin Orange Spinach Salad with Chicken and Lemon Honey Ginger Dressing

- Wonton strips:
- Dressing
- 1/4 cup olive oil
- 1/4 cup canola oil
- 1 tsp lemon zest
- 3 1/2 Tbsp fresh lemon juice
- 2 Tbsp honey
- 2 Tbsp peeled and grated ginger
- 1 clove garlic
- 1 tsp dijon mustard (Emeril's is the only way to go)
- 1/4 - 1/2 tsp salt , to taste
- 12 wonton wrappers , sliced into 1/2-inch thick strips
- Vegetable oil , for frying
- Cinnamon
- Salad:
- 1 lb boneless skinless chicken breast , grilled and sliced
- 1 cup sliced almonds , toasted
- 10 oz baby spinach
- 2 cups snow peas , sliced into halves
- 1 1/2 cups matchstick carrots
- 1 red bell pepper , seeded and diced
- 1 1/2 (15 oz) cans mandarin oranges (no sugar added), drained well (fresh would work too)
- 1/2 cup cilantro , stems removed
- Black and white sesame seeds , for garnish (optional)
Chocolate Pumpkin Banana Bread

Combine all the dry ingredient with the wet
- Dry:
- 1 3/4 cup oat flour
- 1/4 c coconut flour
- 2 tbsp coconut sugar
- 2 tsp baking powder
- 2 tsp cinnamon
- 3 tsp pumpkin pie spice
- 1 tsp pink salt
- Wet:
- 2 mashed bananas
- 3 eggs
- 2/3 c pumpkin puree
- 1/4 c almond milk
- 1/4 c coconut oil
- 2 tbsp maple syrup
- 1/2 c dark chocolate chips
- Optional: if you want a sweeter bread add 1 squirt of liquid stevia or just add more maple syrup.

In a small bowl, mix soy sauce, broth, vinegar, ginger, garlic, cornstarch, paprika, hot sauce, sesame oil

- 6 tbsp chicken broth (or water)
- 6 tbsp rice vinegar
- 3 - 6 tbsp peanut butter (optional)
- 1 tsp fresh ginger, finely chopped
- 3 cloves garlic, finely chopped
- 4 tsp cornstarch
- 2 tsp paprika
- 2 tsp hot sauce
- 1 tsp seseme oil
- 1/2 cup sugar (original calls for 1 cup)
- 3 tbsp water
- 2 red peppers, cut in large strips
- 3/4 cup canola oil
- 2 lbs boneless, skinless chicken things cut into large cubes
- 1/2 cup flour
- 2 green onions, diced
- salt & pepper, to taste
- 1/2 cup chopped peanuts (optional)

- 1 vegan sausage (I use the Yves Spicy Italian Sausages), sliced
- 1 tsp vegan butter

Roasted Green Beans with Mushrooms, Balsamic, and Parmesan

- 8 oz. mushrooms, sliced in 1/2 inch slices (I used brown crimini mushrooms, but any mushrooms will work)
- 1 lb. fresh green beans, preferably thin French style beans
- 1 1/2 tbsp olive oil
- 1 tbsp balsamic vinegar
- salt and fresh ground black pepper to taste
- 2 tbsp finely grated parmesan cheese

- For The Cake:
- 1 1/2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 3/4 cup brown sugar (preferably dark)
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 1/4 cups dry red wine (your secret ingredient!)

- 1/4 cup unsalted butter, at room temperature
- 8 oz semisweet chocolate chips

Herbed Cucumber Soup with Toasted Almonds

Preheat over to 350. Spread the almonds on a baking sheet and toast until lightly browned and aromatic, 5-7 minutes

- 1 English cucumber, halved and seeded if necessary
- 1 1/2 cups (12oz/375ml) low-fat plain yogurt

- 1/4 cup (1/3oz/10g) finely chopped fresh flat leaf (Italian) parsley
