In a large sauté pan over medium-high heat, warm 1 Tbs
- 3 Tbs. plus 1/4 cup (2 fl. oz./60 ml) olive oil
- 1/2 yellow onion, grated
- 1/2 large carrot, peeled and grated
- 1 tsp. kosher salt, plus more, to taste
- 1 lb. (500 g) ground turkey
- 1 1/2 cups (3 oz./90 g) fine fresh bread crumbs
- 1 egg, whisked
- 2 tsp. chopped fresh sage
- 1/2 tsp. freshly ground pepper, plus more, to taste
- 2 cans (each 28 oz./875 g) whole plum tomatoes, preferably
- San Marzano, with juices
- 2 garlic cloves, minced
- 1 tsp. dried oregano
- 1 lb. (500 g) spaghetti
