Black-eyed Pea Masala

Garam masala is a spice blend that is best when made from whole seeds just before using
- 2 cups black-eyed peas
- 1 large onion, diced
- 2 teaspoons cumin seeds
- 1/8 teaspoon asafetida
- 1 tablespoon ginger-root, minced (or ginger paste)
- 1 tablespoon garlic, minced
- 1/4 – 1/2 teaspoon cayenne or other red pepper (or to taste)
- 1 teaspoon turmeric
- 2 15-ounce cans diced tomato
- 2 teaspoons garam masala
- 1 teaspoon sugar
- 1 teaspoon salt (or to taste)
- chopped parsley or cilantro, to garnish
Healthy Chocolate Chip-Oatmeal Cookies

1. Preheat oven to 350 degrees F
- 6 Tbs unsalted butter
- 3/4 cup light brown sugar, packed
- 1 1/2 cups old fashioned oatmeal
- 1/3 cup all-purpose flour
- 1/3 cup whole wheat flour
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1 large egg, lightly beaten

Lentil and Vegetable Stew

Cook the onion in a large, non-stick Dutch oven until it begins to brown
- 1 large onion, chopped
- 4 cloves garlic cloves, minced
- 2 12-ounce packages frozen vegetables* (or 2 pounds fresh vegetables cut in bit-sized pieces)
- 1 15-ounce can diced tomatoes, preferably fire-roasted
- 1 15-ounce can cooked lentils (or 1 1/2 cups cooked lentils and cooking liquid)
- 4 cups vegetable broth or “no-chicken” broth
- 1 1/4 teaspoon Mexican oregano (or regular oregano)
- 1/2 teaspoon hot smoked paprika
- 1/2 teaspoon ground cumin
- 1/3 cup quinoa, rinsed very well
- 2/3 cup pumpkin (canned or cooked and water pressed out)

Lemon Opera Cake

Preheat oven to 400 degrees
- Joconde (Cake Layer)
- 6 large egg whites, at room temperature
- 2 Tbsp. granulated sugar
- 2 cups almond meal/flour
- 2 cups icing sugar, sifted
- 6 large eggs (Note: You will need a total of 12 eggs but you will not use 6 of the egg yolks)
- 1/4 cup plus 2 Tablespoons millet flour
- 2 Tablespoons sweet rice flour

Zucchini-Cheddar Pie

Rough Puff Pastry: Whisk together the flour and salt in a bowl
- Rough Puff Pastry:
- 2 cups all-purpose flour
- 1 teaspoon kosher salt
- 2 sticks unsalted butter, divided
- 4 to 6 tablespoons cold water
- Zucchini-Cheddar Filling:
- 1 double rough puff pastry dough
- 1/2 cup finely grated Parmesan cheese
- 1 1/2 cups shredded cheddar cheese
- 1 medium zucchini, very thinly sliced into rounds
