Sweet Pink Berry Bagels

- Also needed:
- makes 2 bagels – with plenty of leftover jam/spread
- Double berry Jam
- 3 cups ripe raspberries
- 1 cup ripe strawberries – destemmed
- 1/2 cup maple syrup
- 1/4 cup lemon juice
- 2 tsp corn starch
- To Do: Boil on low for at least 45 minutes. Chill in fridge.
- 3 Tbsp tofu cream cheese
- 2 tbsp Double Berry Jam, from above (chilled)
- 2 multigrain bagels, toasted
- Directions:
- 1 . Make the jam the night before. Store in fridge to chill.
- 2 . In the morning, simply whip together the cream cheese and jam. Toast your bagels. Spread on bagels. Serve!
- Easy. Yummy. Fun. Pink!
Arugula Salad: Mango, Macadamia, Avocado

1. I made a quickie salad dressing out of a few of my favorite flavors
- dressing (or use your own recipe):
- 1 large mango, cubed
- 1 avocado, diced
- 3/4 cup macadamia nuts, roasted/salted
- 5 cups fresh arugula
- optional add-in's: sweet onions, diced apple, diced pineapple ... more
- 1/4 cup lemon juice
- 2 Tbsp apple cider vinegar
- 1/4 cup olive oil
- 1 Tbsp Dijon mustard
- 1 tsp agave syrup
- pepper
- dash garlic powder

- Lemon Dill Dipping Sauce
- Prep time: 5 minutes
- 1 cup plain soy yogurt
- 1 tsp dill
- 2 cloves minced garlic
- 2 tbsp lemon juice
- Fresh Black Pepper, to taste
- Directions:
- Combine all ingredients in a medium-sized bowl. Place in the refrigerator for a minimum of 1 hour to chill and allow flavors to combine.
- You can add cut up cucumber to this to make it traditional Tzatziki Sauce.

- 1/4 cup plus 2 TB fresh lime juice

- 1 TB agave
- 1 handful fresh cilantro
- 2 green onions, white and green, chopped
- 1 small jalapeno, seeded and chopped
- 1/2 tsp sea salt
- 1/2 cup extra-virgin olive oil

- 1 tablespoon butter
- 1 clove garlic, minced or grated
- 1 tablespoon flour
- 1/2 cup milk (I used 2%, but whatever you have will be fine)
- 1 ounce cream cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1/2 cup greek yogurt (I used 0%)
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1/2 teaspoon pepper
- 1/2 cup (about 5 ounces) frozen chopped spinach, thawed
- 1 (6.7 ounce) jar grilled artichoke hearts or you can sub marinated artichokes, chopped
- 1 chicken breast, grilled and sliced thin (optional)
- 8 slices thick sourdough or tuscan bread
- butter, for spreading
