Vanilla Rich Chip Cake

Beat all ingredients, except chips, in large bowl on low just to moisten and then on medium for 2 minutes
- 1 (18.25 oz) yellow cake mix
- 1 (3.5 oz) package instant vanilla pudding mix
- 1 c sour cream
- 1/2 c vegetable oil
- 1/2 c water
- 4 eggs
- 1 T vanilla extract
- 1 c mini chocolate chips
Baked Hush Puppies

Combine first 5 ingredients in a medium bowl; make a well in center of mixture
- 2/3 c yellow cornmeal
- 1/3 c flour
- 1/2 tsp salt
- 1/2 c minced onion
- 1/3 c skim milk
- 1/4 c egg substitute
- 1 Tbsp oil
- 1/8 tsp pepper
- cooking spray
Crockpot Breakfast

- 1/2 c short grain brown rice
- 1/2 c millet
- 1/2 c barley
- 8 c water
- 1/2 c dates
- 1 tsp vanilla
- 1 tsp lemon juice

- 1 tbsp light mayonnaise

- 2 slices multi-grain bread
- 1 slice cheese
- 1/4 c hummus
- 1/2 c tomato, sliced

Spicy Lentil Spaghetti

Saute onion and garlic over med-high heat for 5 minutes
- 3/4 c chopped onion
- 2 cloves minced garlic
- 4 c water
- 1 1/2 c dried lentils
- 1 tsp crushed red pepper
- 1/2 tsp salt
- 1/2 tsp pepper
- 1-14.5 oz can chopped tomatoes undrained
- 1- 6 oz tomato paste
- 1 tbsp vinegar
- 1 tsp beef bouillion granules
- 1/2 tsp dried whole basil
- 1/2 tsp dried whole oregano
Ham Loaf

Combine mustard, onion, oatmeal, egg, milk, parsley with meat
- Topping:
- 1 1/2 lbs ground smoked ham
- 1 Tbsp mustard
- 1 small chopped onion
- 1 Tbsp chopped parsley
- 1/2 c quick cooking oatmeal
- 3/4 c evaporated milk
- 1 egg; beaten
- 1/4 c light brown sugar
- 1/4 c vinegar

- 1 c cubed fully cooked ham
- 1 large onion, chopped
- 2 tsp dried parsley
- 2 Tbsp butter
- salt and pepper to taste
