TART - Tangy Lemon Tartlets With a Burnt Sugar Crust

Place the flour, butter and sugar in a food processor and process until the mixture resembles breadcrumbs
- Filling:
- 2 cups + 2 tablespoons (300g) all purpose flour
- 2/3 cup + 1/2 tablespoon (157g) unsalted butter, cold and chopped
- 2 tablespoons caster sugar
- 2 teaspoons iced water
- 1/2 cup (120ml) heavy cream
- 3 eggs
- 1/4 cup (50g) caster sugar
- 1/4 cup (60ml) lemon juice
- finely grated zest of 2 large lemons
- 2 tablespoons caster sugar, extra
SNACKS - Chinese Steamed Cake - Xi Ban (古早味喜板)

Put all dough ingredients in a whisking bowl
- Dough
- 150 grams of glutinous rice flour (糯米粉)
- 150 grams of plain flour (普通面粉)
- 100 grams of castor sugar (细砂糖)
- 1/2 packet or about 6 grams of Instant Yeast (即时酵母)
- 25 grams of corn oil (玉米油)
- 150 grams of lukewarm warm water (温水)
- Few drops of permitted red colouring (optional) (红色色素-可免)
- Others
- 15 About 15 pieces of lightly greased banana leaves of 7cm x 7 cm (香蕉叶)
- A steamer with water capable of steaming at least 15 minutes under high heat.
CHICKEN - Portuguese BBQ Chicken Wing

For the chilli sauce, in a bowl of food processor place the chillies and the garlic
- For chilli sauce:
- 2 kg chickens
- Lemon wedges and hot potato chips
- 3 roughly chopped garlic cloves
- 60 ml (1/4 cup) olive oil
- 5-7 small fresh roughly chopped red birdseye chillies
- 2 long red chillies, roughly chopped
- 1 tablespoon sea salt
- 2 tablespoons fresh lemon juice
TART - Amandel Boterkoek (Dutch Almond Butter Cake)

DOUGH: Knead all the ingredients for the dough into a firm ball
- For the dough:
- 2 cups of flour
- 1 cup of butter
- 1 cup caster sugar
- 1 small egg
- pinch of salt
- Filling:
- 2/3 cup butter
- 1 cup sugar
- 1 1/2 teaspoons almond extract
- 1 egg, beaten (reserve 1 tsp)
- 1 1/2 cups flour (maybe replace some with Ground Almond)
- 1/2 teaspoon baking powder
CAKE - Zebra Lines Cake

1. Preheat oven to 170 degrees 2
- Ingredients A :
- 250 g cold egg whites
- 50 ml cold water
- 170 g caster sugar
- 1 1/2 tsp ovalette
- 2 egg yolks
- 200 g superfine flour (I use HK flour)
- 3/4 tsp double action baking powder
- 1 tsp vanilla extract
- Ingredients B :
- 170 g butter (melted)
- 2 tbsp condensed milk (I used 4 tbsp milk)
- Ingredients C :
- 1 1/2 tbsp chocolate emulco
- 2 tbsp cocoa powder
- Ingredients D :
- Some nibbed almonds
CAKE - Brazilian Sweetened Condensed Milk Cake

Preheat the oven to 180ºC/350ºF; generously butter a 22cm* (9in) ring cake pan
- 1 can (395g) sweetened condensed milk
- 4 eggs
- 120 g all purpose flour
- 1/2 tablespoon baking powder
- 50 g unsalted butter, melted and cooled
- icing sugar, for dusting
SNACKS - Roti Canai

1. Combine flour, salt, sugar and ¼ cup of the ghee in a bowl, mix with fingertips
- 3 cups flour
- 1 tsp sugar
- 1 1/2 teaspoons salt
- 1/2 cup ghee, liquid (microwave if necessary)
- 1 egg, beaten
- 3/4 cup milk, room temp
- 1/2 cup water, warm
CAKE - Matcha Tea Marbled Tea Cake

1. Preheat oven to 350. 2
- 1 ⁄2 cup (1 stick) unsalted butter, softened, plus more for pan
- 2 cups all-purpose flour, plus more for pan
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup sugar
- 2 large eggs, room temperature
- 1 cup sour cream, room temperature
- 1.5 teaspoons matcha powder
- 1 teaspoon pure vanilla extract
CHICKEN - Sticky Hoisin Roast Chicken Wings

- Coat each piece well and refrigerate overnight with:
- Cut 1 kg chicken wings into two parts, separating at the joints between the drummets and the wings.
- 4 tbsp Lee Kum Kee hoisin sauce
- 2 tbsp light soy sauce
- 2 tbsp Shaoxing cooking rice wine (or dry sherry)
- When ready to cook, drizzle generously with lots of honey.

- Ingredients for pie shell:
- Low protein flour 150g
- Salt 1/4tsp
- Butter 65g
- Whole egg 30g
- Cold water 20g
- Egg milk mixture:
- Whole egg 50g
- Egg yolk 10g
- Milk 50g
- Dairy whipping cream 50g
- Fillings:
- Bacon 25g, diced
- Onion 350g, sliced
- Oyster mushroom 180g, sliced
- Button mushroom 180g, sliced
- Salt 1/2tsp
- Black pepper 1/4tsp
- Gruyere cheese 60g
