PASTA - Creamy Bacon Carbonara

Instructions Beat the eggs, cream, Parmesan, parsley, salt and the red pepper together in a bowl
- 2 eggs
- 1/4 cup Cream or Heavy Cream (Whipping Cream)
- 1/3 cup Parmesan
- Fresh diced Parsley or dried flakes
- 1/4 tsp. Salt
- 1/2 tsp Red Pepper flakes
- (I doubled the Sauce recipe, and it was perfect)
- 1/2 lb. bacon fried crisp then crumbled
- 1 small onion, chopped (opt )
- 3 mushrooms sliced (opt )
- 1/2 lb. Pasta
COOKIES - Dark and White Chocolate Chunk Cookies

Preheat oven to 175ºC/350ºF
- (from Bon Appetit magazine)
- 2 2/3 cups bittersweet or semisweet chocolate chunks, divided
- 1/4 cup (1/2 stick/57g) unsalted butter, room temperature
- 2 large eggs
- 1/2 cup (88g) packed golden brown sugar
- 2 teaspoons vanilla extract
- 3/4 cup (105g) self-rising flour
- 3 1/2 oz (98g) high-quality white chocolate, very coarsely chopped – there was some left
BREAKFAST - Liege Waffle

Store well in freezer
- 2 cups flour
- 1 cup pearl sugar (reduced to 3/4 cup)
- 1 cup melted butter
- 3 eggs
- 1 (1/4 oz / 7gm) package yeast (used half package)
- 1/3 cup lukewarm water
- 1 1/2 tablespoons sugar (replaced with vanilla sugar)
- 1/8 teaspoon salt
CHICKEN - White Wine and Lemon Roasted Chicken

Pre-heat oven to 350 degrees
- Chicken:
- 8 chicken thighs, excess skin trimmed
- 3/4 cup white wine
- juice of 2 large lemons
- 1 onion quartered
- 3 cloves garlic, crushed
- 3 sprigs thyme
- 2 bay leaves
- 3 teaspoons kosher salt
- 2 teaspoons black pepper
- 1 lemon, sliced
- Vegetables:
- 1 lb petite gold potatoes, halved
- 1/2 lb brussels sprouts, ends trimmed
- 2 large parsnips, sliced
- 1/2 cup diced roasted red peppers
- 2 tablespoons olive oil
CAKE - Oil-less Pandan Chiffon

1. Preheat oven to 170/180C
- 5 egg whites
- 1/4 tsp cream of tartar
- 100 gm sugar
- 5 egg yolks
- 100 gm sugar
- 150 gm flour
- 180 gm thick coconut milk + pinch of salt
- 70 gm concentrated pandan juice
CAKE - Japanese Cotton Cheesecake

1) Grease and line the bottom of two 20cm oval pans
- (A)
- 160 g cream cheese
- 25 g butter
- 120 g milk (I used UHT milk)
- (B)
- 40 g flour (normal plain flour will do, I used superfine flour)
- 30 g cornflour
- (C)
- 4 egg yolks
- (D)
- 4 egg whites
- 1/8 tsp cream of tartar
- 100 g sugar (I cut down to 80g)
- Pinch of salt
DESSERT - 7-Layer Cookies

Preheat oven to 350. Lightly grease an 11 x 7" pan
- 1 stick (1/2 cup) salted butter, melted
- 1 cup graham cracker crumbs
- 1 cup sweetened coconut
- 1 cup semisweet chocolate chips
- 1 cup butterscotch chips
- 1 (14 oz) can sweetened condensed milk
- 1 cup finely chopped pecans
CAKE - Streuselkuchen (German Crumb Cake)

Streusel: Butter a 9-inch square baking pan* (do not use cooking spray – the dough must adhere to the pan)
- Streusel:
- 3/4 cup (105g) unbleached all purpose flour
- 6 tablespoons confectioners’ sugar
- 6 tablespoons (3/4 stick/84g) cold unsalted butter, cut into tablespoon-sized pieces
- vanilla confectioners’ sugar, for sprinkling – I used regular confectioners’ sugar
- German yeast dough: (1/2 portion)
- 1/2 cup (120ml) whole milk
- 1 package (2 1/4 teaspoons) active dry or rapid–rise yeast
- 1/4 cup (50g) granulated sugar
- 2 1/4 cups (315g) unbleached all purpose flour, plus more as needed
- 4 tablespoons (1/2 stick/57g) cold unsalted butter, cut into 4 tablespoon-sized pieces
- finely grated zest of 1 lemon
- 2 large eggs, at room temperature
COOKIES - Coconut Macaroons

Step 1: P Pre-heat oven to 325 degrees
- 1 1/3 cups flaked coconut
- 1/3 cup sugar
- 2 tablespoons all-purpose flour
- 1/8 teaspoon salt
- 2 egg whites
- 1/2 teaspoon vanilla extract
PORK - Stir-fried Pickled Radish with Pork

1) Rinse and soak pickled radish in a bowl of water for about 10 minutes
- Seasoning:
- 3 tablespoons chopped pickled radish 菜脯
- 150 g lean pork
- 50 g dried shrimps
- 3 chillies
- 5-6 strips long beans
- 1 tablespoons chopped garlic
- 1/2 tablespoon oyster sauce
- 1 teaspoon light soy sauce
- 1/2 teaspoon sugar
- Salt and pepper, to taste
