- 3/4 cup unsalted butter (1 1/2 stick)

- 1 tablespoon water
- 1 tablespoon lemon juice

- pinch pepper
- 8 eggs
- 1 tsp vinegar

- 8 pieces of Canadian back bacon or Smoked Ham

DESSERT - Turron Macarons

Macaron: In a large bowl, sift together the almond flour, powdered sugar and salt
- Macaron:
- 180 grams almond flour
- 245 grams powdered sugar
- 140 grams egg whites
- 3 grams egg white powder
- 2 grams of finely ground sea salt
- 80 grams granulated sugar
- edible gold luster or chopped almonds for the topping
- Turron Buttercream:
- 50 grams egg whites
- 100 grams sugar
- 150 grams butter, room temperature
- 50 grams of turron paste

Combine the butter, salt, sugar, and 1 cup (240 mL) water, bring to a simmer over medium heat
- For the sugar syrup:
- 6 tablespoons (75 g) unsalted butter, diced
- 1/4 teaspoon fine sea salt
- 2 tablespoons (25 g) sugar
- 1 cup (140 g) all-purpose flour, sifted
- 4 eggs, at room temperature
- Pearl sugar for sprinkling (see note)
