COOKIES - Peanut Cookies

1. Preheat the oven at 200°C and lay out 2 baking sheets with greased baking paper or silicone mat
- 300 g peanuts, fried/roasted and ground until fine
- 200 g castor sugar
- 250 g all purpose flour
- 200 ml of canola oil (use sparingly and use only enough to bind the mixture)
- 1 teaspoon salt
- handful of peanuts, fried/roasted, halved then cut into quarter when still hot.
- one egg white for the glazing finishing touch
SQUID - Sausage Stuffed Squid

1. squid Clean the squid and set aside in the refrigerator
- 1 lbs. squid bodies (approximately one dozen whole tubes)
- 4 links of good quality hot Italian (pork) sausage; alternatively, you can make a stuffing mixture from ground pork, garlic, chili pepper flakes and whole cumin
- 6-8 vipe ripened tomatoes
- 2 Tbsp. ajvar (relish made from roasted red bell peppers, eggplant, garlic and chili pepper); can be made fresh or store bought (Vava is a reputable brand)
- 3 Tbsp. extra virgin olive oil
- 1/4 cup semi-sweet wine (recommend: Sherry)
- – Basil or tarragon for garnish

- 200 g Unsalted butter
- 50 g Shortening
- 200 g Sugar

RICE - Tri Coloured Roasted Pepper, Pea Risotto with Cheddar

CHICKEN - Chicken Wing Marinade

CAKE - Orange And Lemon Cake

Preheat the oven to 175ºC/350ºF; butter and flour a round 25cm (10-in) cake pan or springform pan
- 3 cups (420g) all-purpose flour
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 tablespoons grated lemon zest
- 2 tablespoons grated orange zest
- juice of 1 lemon
- juice of 1 orange
- 3/4 cup (180ml) milk (preferably whole)
- 1 cup (226g) unsalted butter, at room temperature
- 1 1/2 cups (300g) granulated sugar
- 5 large eggs, at room temperature
- icing sugar for dusting
CAKE - Moist Coconut Cake

Cake: preheat the oven to 180°C/350°F
- Cake:
- 2 cups (280g) all purpose flour
- 1 tablespoon baking powder
- 150 g unsalted butter, softened
- 1 3/4 cups (350g) granulated sugar
- 4 eggs, separated
- 1 teaspoon vanilla extract
- 1/2 cup (120ml) whole milk, room temperature
- 200 ml coconut milk
- pinch of salt
- Topping:
- 1 cup (100g) desiccated unsweetened coconut
- 1/2 cup (120ml) whole milk, room temperature
- 1 can (395g) sweetened condensed milk
COOKIES - Roasted Chestnut Cookies

Preheat oven to 450°F. Cut a small X on the top of each chestnut with a very sharp knife
- 1 pound chestnuts
- 1 cup (2 sticks or 8 ounces) unsalted butter, room temperature
- 2 cups powdered sugar
- 2 teaspoons vanilla extract
- 1/4 teaspoon ground cinnamon + additional for coating
- A few gratings of fresh nutmeg
- 1/8 teaspoon salt
- 2 cups all purpose flour
DIP - Smoked Tomato And Char-grilled Pepper Salsa

This salsa is great made on a charcoal barbeque to get really deep, smokey flavours
- 500 g tomatoes
- 3 medium-sized red peppers
- 1 red chilli
- 1 green chilli
- Olive oil
- 1 clove garlic, minced
- Finely gated zest and juice of 2 limes
- 1/4 cup pitted kalamata olives, very finely diced
- 5 stalks spring onion, finely diced
- 1/4 cup fresh coriander, finely chopped
- 1/2 tsp ground cumin
- Salt, pepper, brown sugar to taste
- Wood chips for smoking (I used Manuka)
CAKE - Lime Yogurt Cake with Blackberry Sauce

Make the cake: Preheat the oven to 350 degrees
- Cake
- 1 cup whole milk plain unsweetened yogurt (this is the ideal; however, I had success with 2% Greek yogurt)
- 1/3 cup vegetable oil (olive oil works as well, for a slightly different flavor profile)
- 1 cup sugar
- zest of one lime
- 1/4 cup lime juice
- 2 eggs
- 1 2/3 cups all-purpose flour
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- Sauce
- 12 ounces fresh blackberries (frozen should work as well, but you should start with half the water)
- 1/4 cup water
- 3 tablespoons sugar
- 1 tablespoon fresh lime juice
