Rock & Roll Bleu Cheese Macaroni & Cheese

1.Boil a pot of lightly salted water
- 16oz package of uncooked noodles (use your favorite style)
- 2 T Butter (unsalted)
- 1/2 cup Green Peppers
- 1/2 cup Red Peppers
- 3/4 cup Heavy Cream
- 8 oz Plain Yogurt (Non Fat is good)
- 1 cup crumbled Bleu Cheese
- 1 1/2 cups shredded Parmesan Cheese
- 1/3 cup All Purpose Flour
- 1 tsp Salt
- 1 tsp Pepper
- 1/2 cup Bread Crumbs for topping
Hoisin Braised Short Ribs

Pat the short ribs dry and season with salt and pepper
- 1 1/2 to 2 pounds boneless beef short ribs
- 2 tablespoons vegetable oil
- 1/2 cup onion, chopped
- 1 pound carrots, peeled and chopped
- 2 tablespoons tomato paste
- 3/4 cup red wine
- 1 cup beef stock
- 1/2 cup Hoisin Sauce
- 2 tablespoons brown sugar
- 1/4 cup + 2 tablespoons orange juice
- 1 cup water
- 6 sprigs fresh thyme
- Salt and pepper to taste
