Avocado Pesto Stuffed Tomatoes

1. Cut a thin slice from the top of each tomato
- # 30 cherry tomatoes (about 1-1/4 pints)
- # 1/2 medium avocado, pitted, peeled, and cut up

Jalapeno Chicken Breasts

1. Sprinkle chicken with chili powder and salt
- 6 bone-in chicken breast halves, skinned
- 1 tablespoon chili powder
- 1/8 teaspoon salt
- 1/2 cup reduced-sodium chicken broth
- 2 tablespoons lemon juice
- 1/3 cup sliced pickled jalapeño chile pepper, drained
- 1 tablespoon cornstarch
- 1 tablespoon cold water
- 1 8-ounce package reduced-fat cream cheese (Neufch¿¿tel), softened and cut into cubes
- 2 slices regular bacon or turkey bacon, crisp-cooked, drained, and crumbled (optional)
Cheesy Chipotle, Corn and Zucchini Casserole

1. Preheat your oven to 350 2
- 3 Tbsp Basil Parmesan Vinaigrette dressing
- 1 medium onion, chopped
- 8 slices bacon, chopped
- 3 medium zucchini, chopped (about 5 Cups)
- 1 C frozen corn, thawed (I use sweet corn)
- 1 to 2 C pizzeria 4 cheese blend (mozzarella, provolone, romano and parmesan)
- 1/2 C sour cream
- 4 Chipotles in adobo, chopped (start with 1, remember this is the heat aspect)

Place the pecans in a food processor and pulse 6 to 8 times, just until they are coarsely chopped
