- 3 slices bacon, chopped

- 2 to 3 small russet potatoes, peeled and chopped
- 1 1/2 cups corn kernels, fresh or frozen
- 1 to 2 cups smoked turkey meat (any leftover turkey meat will work)

Preheat oven to 350. Beat the egg with a fork until well mixed

- 1/2 c softened butter
- 3 fresh Jalapeno peppers - very finely -- (3 to 4) chopped
- 1/4 c onion - very finely chopped

- 2 tsp baking powder

- 9 scoops of your favorite ice cream, softened
Dr Pepper Pulled Pork

Place pork roast, fat side up and onion in a slow cooker
- 1.5 to 2 pound pork roast
- ¼ onion, minced
- 2 teaspoons cayenne pepper
- 1 teaspoon dry mustard
- 1 tablespoon Worcestershire sauce
- ¼ cup apple cider vinegar
- 1 twelve ounce can Dr. Pepper
Chipotle Chicken Panini

Preheat an electric panini press to 400°F according to the manufacturer's instructions
- 2 boneless, skinless chicken breast halves, each about 8 oz., tenders removed and breasts butterflied
- 8 tsp. spicy chipotle rub
- 8 slices country-style bread, each cut on the bias 1/2 inch thick
- Olive oil for brushing
- 8 tsp. mayonnaise
- 8 oz. Monterey jack cheese, shredded
- 1 avocado, peeled, pitted and cut into slices 1/4 inch thick
