Steaks Béarnaise Over Potato Cakes

Combine potatoes, bacon, cheese, 2 tablespoons flour (or more, if potatoes too soft), and egg until blended
- 2 cups prepared sour cream and chive mashed potatoes
- 1/3 cup cooked bacon pieces
- 1/3 cup crumbled blue cheese
- 2 tablespoons + 1/2 cup all purpose flour
- 1 large egg (or 1/4 cup egg substitute)
- 1 1/2 lb grilling steaks (NY-strip, skirt, or ribeye)
- 1/2 teaspoon fresh ground pepper
- 3/4 teaspoon kosher salt, divided
- 3 tablespoons canola oil, divided
- 1 bag fresh spinach (8–10 oz)
- 1 (10-oz) container Philadelphia roasted garlic cooking crème, divided
- 2 tablespoons béarnaise sauce mix
Baked Ziti & Summer Veggies

Cook pasta according to package directions, omitting salt and fat; drain
- 4 ounces uncooked ziti
- 1 tablespoon olive oil
- 2 cups chopped yellow squash
- 1 cup chopped zucchini
- 1/2 cup chopped onion
- 2 cups chopped tomato
- 2 garlic cloves, minced
- 1 cup (4 ounces) shredded part-skim mozzarella cheese, divided
- 2 tablespoons chopped fresh basil
- 2 teaspoons chopped fresh oregano
- 3/4 teaspoon salt, divided
- 1/8 teaspoon crushed red pepper
- 1/4 cup (2 ounces) part-skim ricotta cheese
- 1 large egg, lightly beaten

Panna Cotta

- For Panna Cotta:
- 1 envelope unflavored jello (approximately 2 teaspoons)
- 1/2 cup whole milk
- 2-1/2 cups heavy cream
- 1/2 cup granulated sugar
- 2 teaspoons pure vanilla extract
- For Topping:
- 1 cup fresh mixed berries, gently washed, drained and sweetened to taste
- OR 2 pints fresh strawberries, washed, drained and sliced
- 3 tablespoons good-quality balsamic vinegar
- 1 tablespoon granulated sugar
- 1/2 teaspoon freshly cracked black pepper
- 6 fresh mint leaf sprigs
Rhubarb Syrup

- 1 cup quick-cooking polenta
- 1/4 teaspoon salt
- 1/3 cup (1 1/2 ounces) grated Parmesan cheese

- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher salt

- 1 vessel whole raw eggs
- 1 vessel all-purpose flour
- 1 3/4 vessel whole milk
- 1/4 vessel melted sweet butter
- A dash to a pinch of salt.
Imperia Bloody Mary

Combine all ingredients except the vodka and celery in a blender
- 27 ounces tomato juice
- 3 1/2 ounces lemon juice
- 1 1/2 ounces balsamic vinegar
- 1 teaspoon horseradish
- 1 teaspoon salt
- 1 teaspoon Worcestershire sauce
- 20 drops Tabasco sauce
- 1 1/2 ounces Imperia vodka
- 1 celery stalk
Summer Pea, Watermelon and Farro Salad

- 1 cup uncooked farro or wheat berries
- 1 cup shelled green peas (about 3/4 pound unshelled)

- 1 cup cubed seeded watermelon
- 1 cup coarsely chopped fresh flat-leaf parsley
