- 1 lb mozzarella cheese, shredded

Individual Pizza Omelet

Whisk eggs, milk, parsley, salt, pepper, oregano and basil together lightly
- 3 eggs
- 1/4 cup milk
- 1 tbsp chopped fresh parsley
- 1/2 tsp salt
- pinch each of black pepper, dried oregano and dried basil
- 1 tbsp olive oil or butter
- 2 tbsp tomato sauce or spaghetti sauce
- 1/4 cup grated mozzarella cheese
- 1/4 cup assorted pizza toppings (tomatoes, cooked bacon, ham, sliced mushrooms)

Healthy Tomato-Spinach Risotto

In a medium saucepan, bring broth to a simmer, but don't boil
- 5 cups reduced-sodium canned chicken broth
- 1 tbsp olive oil
- 1/2 cup chopped onion
- 1 1/2 cups uncooked Arborio rice
- 1/3 cup dry white wine or dry vermouth
- 1 10 oz package frozen chopped spinach, thawed and squeezed to remove water
- 1 14 oz can diced tomatoes, drained
- 1/3 cup grated parmesan cheese
- 1/2 tsp salt
- 1/8 tsp freshly ground black pepper

- 1/4 cup soya sauce
- 3 tbsp mild honey
- 3 tbsp minced fresh ginger
