Orange Cake

Williamsburg Orange Cake This cake is incredibly moist
- 2 1/2 cups All-Purpose Flour
- 1 1/2 cups sugar
- 1 1/2 tsp baking soda
- 1/2 tsp Kosher salt
- 1 1/2 cups buttermilk
- 1/2 cup butter, softened
- 1/4 cup shortening
- 3 eggs
- 1 tsp vanilla
- 1 cup golden raisins, cut up (I didn't have any. so I subbed , drained crushed pineapple)
- 1/2 cup pecans or almonds, finely chopped (I used almonds)
- 1 tbsp orange zest
- Williamsburg Butter Frosting*
- 3 cups confectioner's sugar (10X sugar)
- 3-4 tbsp orange juice
- 2 tsp orange zest

- 2 pounds ground beef
- One 29-ounce can tomato sauce
- One 29-ounce can kidney beans (with liquid) (Michelle just uses one 15 oz can light red kidney beans)
- One 29-ounce can pinto beans (with liquid) (Michelle just uses one 15 oz can of pinto)
- 1 cup diced onion (1 medium onion)
- 1/2 cup diced green chili (2 chilies) (Michelle puts in 3-*4 small cans of diced green chili)
- 1/4 cup diced celery (1 stalk)
- 3 medium tomatoes, chopped
- 2 teaspoons cumin powder
- 3 tablespoons chili powder
- 1 1/2 teaspoons black pepper
- 2 teaspoons salt (Michelle might add a little more salt)
- 2 cups water (Michelle just uses 1 cup water)
SALMON NEW ORLEANS

In a small bowl stir together all cajun seasoning ingredients and set aside
- 4 6-ounce salmon fillets
- salt and pepper, to taste
- 1 pound large shrimp, peeled and de-veined
- 8 tablespoons butter, divided
- 2 tablespoons honey
- cajun seasoning
- 1/2 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/4 teaspoon pepper
- 1/2 teaspoon onion salt
- 1/2 teaspoon cayenne pepper
- heaping 1/2 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper flakes

Preheat oven to 350 degrees
- Cake:

- 1 1/4 1 1/4 1/4 cups unsweetened applesauce or oil, this is what my Nana used
- 2 2 2 cups granulated sugar
- 3 3 3 eggs room temperature
- Two Two
- 2 2 2 cups all-purpose flour
- 1 1 1 tsp baking soda
- 1 1/2 1 1/2 1/2 tsp baking powder
- 1/2 1/2 1/2 tsp salt
- 1 1 1 tsp cinnamon
- Three Three
- 2 2 2 cups grated carrots
- 1 1 1 cup shredded sweetened coconut
- 1 1 1 cup chopped nuts optional
- 1 1 1 tsp vanilla
- 1 1 1 cup Dole crushed pineapple not drained! {use the pineapple in JUICE not syrup}
- Cream Cheese Frosting:
- 1/2 1/2 1/2 cup butter softened
- 8 8 8 oz cream cheese softened
- 1 1 1 tsp vanilla
- 1 1 1 lb powdered sugar
- top with toasted pecans or coconut if desired

- 2 cups uncooked long grain rice (michelle uses 2 bags of cooked brown rice)
- 1 3/4 teaspoons kosher salt
- 1 (2.5 oz) sweet Italian sausage link, casing removed (Michelle nixes this otherwise uses ground up Nature's Promise kale & fontina chicken sausage).
- 10 oz (.65 lbs) 93% lean ground turkey (michelle uses grass fed beef and/or lean ground turkey)
- 1/4 cup onion, minced
- black pepper
- 5 oz frozen peas
- 2 cups homemade tomato sauce (michelle uses homemade Spicy Arrabiata sauce)
