Creamy Celery and Garlic Soup

In large saucepan, heat oil; add onions
- 1 Tbsp. plus 1 tsp. vegetable oil
- 2 cups sliced green onion
- 4 cups sliced celery
- 2 cups peeled garlic cloves
- 20 oz. pared potatoes, cut into 1/2 inch cubes
- 3 packets low-sodium chicken broth
- 2 Tbsp chopped fresh parsley
- 1/4 tsp. salt
- 1/8 tsp. ground black pepper
Vietnamese Chicken Salad with Rice Noodles

I'm going to try this in rice wraps and use the dressing as a dipping sauce
- For the Dressing
- red pepper flakes
- 4 cloves garlic
- 2 tablespoons rice vinegar
- 2 tablespoons brown sugar
- 4 tablespoons fish sauce
- 6 tablespoons lime juice
- 6 tablespoons vegetable oil
- For the Salad
- 1 lb. boneless skinless chicken breasts
- 6 ounces rice noodles
- 4 large carrots, peeled
- 1/2 lb bean sprouts
- one large handful of each -- cilantro leaves, and green onions
Dark Christmas Cake

Grease and line a 10" tube pan with brown paper or aluminum foil
- 3/4 cup currants
- 3 1/2 cups raisins
- 2 cups mixed candied fruit
- 1 cup candied cherries, halved
- 1 1/2 cups slivered almonds
- 1/3 cup sherry
- 2 cups flour
- 1 1/4 teaspoons cinnamon
- 1/4 teaspoon cloves
- 1/4 teaspoon allspice
- 1 cup golden flavour crisco shortening
- 1/2 cup sugar
- 3 eggs
- 1 cup black current jam
Chicken Cakes Parmigiana

1. In medium bowl, mix bread crumbs, egg, milk, Parmesan cheese and garlic salt
- 1/2 cup Progresso™ Italian-style bread crumbs
- 1 egg
- 2 tablespoons milk
- 2 tablespoons grated Parmesan cheese
- 1/2 teaspoon garlic salt
- 2 cups finely chopped deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
- 1/4 cup vegetable oil
- 1 cup tomato pasta sauce, heated
- 1/2 cup shredded mozzarella cheese (2 oz)
Cheaters Scalloped Potatoes

Melt butter in frying pan and saute onion
- 2 tsp. butter
- 1 small onion, chopped
- 5 cups hash browns, frozen
- 1 can cream of mushroom soup
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 cup cheddar cheese, shredded
Italian Wedding Soup

1 In medium bowl combine, meat, egg,bread crumbs, parmesan cheese, basil& onion powder; shape into 3/4" balls
- 1/2 lb lean ground beef
- 1 egg, slightly beaten
- 2 tablespoons breadcrumbs
- 1 tablespoon parmesan cheese
- 1/2 teaspoon dried basil
- 1/2 teaspoon onion powder
- 5 3/4 cups chicken broth
- 2 cups chopped escarole or 2 cups chopped spinach
- 1/2 cup orzo pasta, uncooked
- 1 Tbsp. olive oil
- 1/2 cup finely chopped carrot
- 1/2 cup diced yellow onion
- 1/2 cup diced celery
- 4 cloves garlic, minced (1 1/2 Tbsp.)
- grated parmesan cheese
Cherry-Chocolate Volcano Cookies

RESERVE 6-1/2 cherries; chop remaining cherries
- 3/4 cup maraschino cherries, drained, divided
- 2 pkg. (6 squares each) Baker's Premium 70% Cacao Dark Chocolate, divided
- 1/4 cup plus 2 Tbsp. butter, divided, softened
- 2 eggs
- 3/4 cup packed brown sugar
- 1/2 cup flour
- 1/4 tsp. Magic Baking Powder
- 1/2 cup chopped peanuts
- 2 Tbsp. maraschino cherry liquid

On each of 4 salad plates arrange the tomato slices like fanned-out cards until the tomatoes are evenly distributed
- 2 pounds fresh tomatoes, sliced 1/4 inch thick
- 12-16 fresh basil leaves
- 3 ounces fresh mozzarella, diced
- 1 tablespoons balsamic vinegar
- 1 tablespoons extra virgin olive oil
- 1/4 teaspoon salt
- Fresh ground black pepper
Refried Beans with "Everything"

- 1-2 Tbsp. vegetable oil
- 1 large onion, chopped
- 125 g. bacon, cut into small pieces
- 4 garlic cloves finely chopped
- 1 tsp. ground cumin
- 1/2 tsp. mild chili powder
- 400 g. canned tomatoes, diced & drained reserving 3/4 cup juice
- 400 g. canned refried beans broken up into pieces
- generous 1/3 cup beer
- 400 g. canned pinto beans, drained
- salt & pepper
- 2 1/4 cups cheddar cheese grated
- To Serve
- Warm flour tortillas
- Sour cream

- 1 ham stock cube or 1 beef or 1 chicken stock cube , if ham stock isn't available
- 3 -4 tablespoons fresh parsley , chopped
- salt (to season)
- coarse-ground pepper (to season)
