Spicy Mexican Slaw with Lime and Cilantro

Makes about 4 servings, recipe can be easily doubled
- 4 cups thinly sliced green cabbage
- 2 cups thinly sliced red cabbage
- (You can use all green or all red cabbage.)
- 2 green onions, thinly sliced
- 1/2 cup chopped cilantro (or more)
- 4 T mayo
- 3 T fresh lime juice (more or less to taste)
- hot sauce to taste (I used about 1/2 tsp. green Tabasco sauce when I first made this, but lately I've been using Sriracha sauce)
- salt to taste (I used Vege-Sal)
Ranch Chicken Salad

In a small bowl, combine the mayonnaise, ranch dressing, sour cream, lemon juice and pepper
- 1/4 cup reduced-fat mayonnaise
- 3 tablespoons fat-free ranch salad dressing
- 3 tablespoons fat-free sour cream
- 1 tablespoon lemon juice
- 1/8 teaspoon pepper
- 2 cups cubed cooked chicken breast
- 1/2 cup thinly sliced celery
- 2 tablespoons diced sweet red pepper
- 1 tablespoon chopped green onion
Paneer Pakoras

Boil the potato and grate it; peel and chop the fresh ginger and seed, then finely chop the Thai green chilli
- PAKORAS
- 3.5 oz (100g) Paneer (grated)
- 1 large Potatoes
- 1 tsp Ginger (grated)
- 1 Thai Green Chili
- 1/2 tsp. Salt
- 1 tsp. Garam Masala
- 3.5 oz. (100g) Spinach (fresh, chopped)
- BATTER
- 3.5 oz. (100g) Chickpea Flour
- 5 oz. (150ml) Water
- pinch Garam Masala
- 1/4 tsp. Salt
- 3.5 oz (100g) Spinach (fresh chopped)
- Canola Oil (for deep frying)
Peanut Butter Cookies

Cream butter and both sugars together
- 1 cup butter or margarine, softened
- 1 cup brown sugar, packed
- 1 cup sugar
- 2 eggs
- 1 cup smooth peanut butter
- 3 cups flour
- 2 teaspoons baking soda
- 1/4 teaspoon salt
Blue Cupcakes

1 Heat oven to 350°F (325°F for dark or nonstick pans)
- 1 box Betty Crocker® SuperMoist® white cake mix
- Water, vegetable oil and egg whites called for on cake mix box
- 1/2 teaspoon almond extract
- Frosting and Decorations
- 1 container Betty Crocker® Rich & Creamy vanilla frosting
- Betty Crocker® blue gel food color
- 1/4 cup Betty Crocker® blue candy sprinkles
- 2 oz vanilla-flavored candy coating (almond bark), chopped
Oven Kalua Pork

- 2 cups water
- 1 teaspoon liquid smoke

Roast Pork Wrap

Spread aioli or Dijon mayonnaise on flatbread
- 1/2 cup mayonnaise
- 1 each flatbread *
- 1/4 cup red onions roasted
- 1/4 cup potatoes roasted, diced
- 1/4 cup roma tomatoes dried
- 1/4 cup romaine lettuce jullienned*
- 1/4 pound pork loin roasted
Pork Stroganoff from leftovers

1. Fill a pot of water and bring it to a boil
- 12 ounces leftover roast chicken, pork, or beef, cut into strips
- 8 ounces mushrooms, sliced
- 1/2 teaspoon dried thyme
- 2 tablespoons unsalted butter (uses 1 tablespoon at a time)
- 1/2 small onion, chopped
- 1/2 cup wine (use red for beef and white for chicken or pork)
- 1/2 cup stock or broth (use beef for beef and chicken for chicken or pork)
- 1 tablespoon tomato paste
- 1/2 cup fat free sour cream
- Salt and pepper
- 4 ounces egg noodles
Cheesy Sausage and Penne Casserole

1. Heat oven to 350°. Cook and drain pasta as directed on package
- 3 cups uncooked penne pasta (about 10 ounces)
- 1/4 cup butter or margarine
- 1/3 cup Gold Medal™ all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon pepper
- 2 cloves garlic, finely chopped
- 3 cups milk
- 2 cups shredded Italian-style cheese blend (8 ounces)
- 1/2 cup grated Parmesan cheese
- 8 ounces smoked sausage, sliced
- 1/4 teaspoon Italian seasoning
Pulp Cake

Mix all. Bake in a slow overn for 1 1/4 hours
- 2 cups brown sugar
- 2 cups fruit pulp
- 1 cup cholate chips
- 1 cup raisins or nuts
- 3/4 cup canola oil
- 1/2 tsp. salt
- 2 tsp. baking soda
- 1 tsp. cinnamon
- a little bit of nutmeg
- 3 cups flour
- 1/2 cup crystalized lemon or orange peel (opt)
