SANGRIA GLAZED PRAWNS

For the glaze: In a small sauce pot add all ingredients except cornstarch and water
- Glaze:
- • 3/4 cup red wine
- • 1/4 cup apple juice
- • 1/4 cup orange juice
- • 1/4 cup sherry
- • 2 tablespoons brown sugar
- • 2 tablespoons honey
- • 1 tablespoon cornstarch
- • 3 tablespoons cold water
- For the Prawns:
- • 1 tablespoon butter
- • 1 tablespoon canola oil
- • 1/2 cup diced red onion
- • 1 red bell pepper, diced
- • 1 apple, cored, diced
- • 1 pound shrimp (21 to 25 count), cleaned and deveined
- • 1 tablespoon minced garlic
- • 1 teaspoon paprika
- • Sprigs fresh mint
CHINESE SPARERIBS WITH TERIYAKI GLAZE

Preheat the oven to 300 degrees F
- Spiced spare ribs:
- • 2 (4-pound) racks pork spareribs, trimmed of excess fat
- • 1/2 cup Chinese five-spice powder
- • Sea salt and freshly ground black pepper
- Teriyaki glaze:
- • 1 cup low-sodium soy sauce
- • 1 cup grapefruit juice
- • 1/4 cup hoisin sauce
- • 1/4 cup ketchup
- • 3 tablespoons rice vinegar
- • 1/4 cup brown sugar
- • 1 fresh red chili, minced
- • 2 garlic cloves, smashed
- • 2-inch piece fresh ginger, whacked open with the flat side of a knife
- • 2 tablespoons sesame seeds, for garnish
- • Chopped fresh cilantro and green onion, for garnish

Dressing: In a small bowl, whisk together the lime juice, lemon juice, fish sauce and honey
- Dressing:
- • 1/3 cup fresh lime juice, from about 5 limes
- • 3 tablespoons fresh lemon juice, from 1 large lemon
- • 2 tablespoons fish sauce*
- • 2 tablespoons honey
- Larb:
- • 3 tablespoons vegetable or canola oil
- • 1/2 red onion, diced
- • 3 shallots, thinly sliced
- • 1 (4-inch) piece lemongrass, minced (about 1/4 cup)*
- • 1 Thai chile, such as prik kee noo, or 1 serrano chile, stemmed and thinly sliced*
- • Kosher salt
- • 1 1/2 pounds ground turkey, preferably dark meat
- • 1/2 cup chopped fresh mint leaves
- • Freshly ground black pepper
- • 1 head butter lettuce, leaves separated

CHUNKY CHICKEN CHILI

In a large Dutch oven, melt 4 tablespoons butter over medium-high heat
- • 1 stick butter, divided
- • 2 pounds boneless, skinless chicken breasts, cubed into 1/2-inch pieces
- • 1/4 cup all-purpose flour
- • 1 large onion, chopped
- • 1/4 cup red pepper, diced
- • 1/4 cup green pepper, diced
- • 2 cups chicken stock
- • 1 cup heavy cream
- • 2 tablespoons chili powder
- • 1 teaspoon ground coriander
- • 1 teaspoon ground cumin
- • 1 teaspoon cayenne pepper
- • 1 tablespoon cracked black pepper
- • 1 tablespoon kosher salt
- • 2 (14.5-ounce) cans cannellini beans, drained
- • 2 (4-ounce) cans mild green chiles
- • 1/2 cup sour cream
- • 1 1/2 cups grated Cheddar, for garnish
- • 3 tablespoons chopped parsley leaves, for garnish

- For the Guacamole:
- • 2 tablespoons olive oil
- • 1 1/2 cups onion, finely chopped

Simple Chunky Pizza Sauce

Heat the oil in a 1-1/2 qt sauce pan
- This makes enough sauce for 1 12-inch pizza.
- • 1 tbsp olive oil
- • 1/2 onion, diced small
- • 1 clove garlic, minced
- • 1 15-oz can whole tomatoes
- • 1 sprig fresh oregano
- • 1/2 tsp sugar
- • 1/2 tsp kosher salt
- • 1/8 tsp fresh ground pepper
PORK CHOPS ALLA PIZZAIOLA

Heat the oil in a heavy large skillet over medium heat
- • 2 tablespoons olive oil
- • 2 (1-inch thick) bone-in pork loin center-cut chops (about 12 ounces each)
- • Salt and freshly ground black pepper
