Beer-Braised Bacon Bacon Cheeseburgers

Pre-heat oven to 325ºF. Place a large skillet over medium heat with 1 turn of the pan of EVOO, about 1 tablespoon
- 1 tablespoon EVOO – Extra Virgin Olive Oil
- 10 slices smoky bacon, 2 of them chopped
- 1 small onion, finely chopped (about 1/4 cup)
- 3/4 pound ground chuck
- 3/4 pound ground sirloin
- 2 tablespoons Worcestershire sauce
- Salt and ground black pepper
- A few hearty glugs (about 1/2 cup) stout beer, such as Guinness
- 1/2 cup sour cream
- 1 tablespoon prepared horseradish
- 3 tablespoons grainy mustard
- 4 Kaiser rolls, split open
- 4 slices aged white cheddar cheese, such as Oscar’s "Counter Cheese"
- 4 leaves lettuce
- 1 red onion, sliced
Double-Fried French Fries

Peel potatoes on the sides, leaving the ends with the skin on
- • 4 (4 to 5-inches long) russet potatoes (about 2 pounds)
- • 2 quarts canola oil
- • 1 tablespoons fine-grain sea salt
- • 1 teaspoon freshly ground black pepper
RED BEANS AND RICE

- Rice:
- • 1 tablespoon vegetable oil
- • 1 medium onion, chopped
- • 2 ribs celery, chopped
- • 1 green bell pepper, chopped
- • 2 cloves garlic, minced
- • 1/2 pound smoked sausage, cut into 1/4-inch slices
- • 1 tablespoon Neelys Dry Rub
- • 1 teaspoon dried thyme
- • Salt and freshly ground black pepper
- • 2 (12-ounce) cans red beans, drained and rinsed
- • 3 cups chicken stock
- • 2 bay leaves
- • 4 cups chicken stock
- • 2 cups long-grain rice
- • 1 tablespoon vegetable oil
- • Pinch salt
BAKED MACARONI AND CHEESE

- Topping:
- • 1/2 pound elbow macaroni
- • 3 tablespoons butter
- • 3 tablespoons flour
- • 1 tablespoon powdered mustard
- • 3 cups milk

- • 1/2 teaspoon paprika
- • 1 large egg
- • 12 ounces sharp cheddar, shredded

- • ¼ C white vinegar
- • 2 tsp sugar (Hawaiian)

- • 1/4 cup red pepper, diced
- • 1/4 cup green pepper, diced
- • 2 cups chicken stock
- • 1 cup heavy cream
- • 2 tablespoons chili powder
- • 1 teaspoon ground coriander
- • 1 teaspoon ground cumin
- • 1 teaspoon cayenne pepper
- • 1 tablespoon cracked black pepper
- • 1 tablespoon kosher salt
- • 2 (14.5-ounce) cans cannellini beans, drained
- • 2 (4-ounce) cans mild green chiles
- • 1/2 cup sour cream
- • 1 1/2 cups grated Cheddar, for garnish
- • 3 tablespoons chopped parsley leaves, for garnish
