Baked Sweet-Potato Fries

A healthy redo of french fries, this popular "vegetable" curbs the fat and salt but keeps the crunch
- * Vegetable oil for parchment
- 2 * 2 large sweet potatoes (about 2 pounds), skins on, scrubbed and cut into 4-inch sticks, each 1/2 inch thick
- 3 * 3 large egg whites (a scant 1/2 cup)
- * Mediterranean Spice
- 1 1/2 * 1 1/2 teaspoons dried oregano
- 1 * 1 teaspoon dried thyme
- 1 * 1 teaspoon garlic powder
- 1/2 * 1/2 teaspoon salt
- Directions
- 1 . Place all ingredients in spice grinder or small food processor and grind briefly to blend.

- 1 * 1 fennel bulb, thinly sliced
- 1/4 * 1/4 cup Italian parsley, chopped

- 1/2 * 1/2 lemon, juiced
- 1/2 * 1/2 teaspoon sea salt
- 1/4 * 1/4 medium white onion, sliced
- 2 * 2 tablespoons extra-virgin olive oil
- * Additional olive oil and chopped fresh parsley, for garnish
Stir-Fried Vegetables and Chicken with Buckwheat Noodles

1. In a large pot, boil 6 cups of water; add the salt
- 1 * 1 packet of buckwheat noodles, (to make about 2 cups when cooked)
