- 270 ml can coconut milk
- 1/2 cup (140g) crunchy peanut butter
- 1/4 firmly packed cup
- (40g) brown sugar
- 4 garlic cloves, crushed
- 2 tbs sweet chilli sauce
- 1 tbs grated ginger
- 1 tbs soy sauce
- 1 tbs lime juice
- 400 g chicken mince
- 1 onion, finely chopped
- 1/3 cup fresh wholemeal breadcrumbs
- 1/4 cup chopped coriander leaves, plus extra leaves to garnish
- Sunflower oil, to shallow-fry
- 4 hamburger buns, split, toasted
- Lettuce, sliced tomato, sliced red onion and finely chopped red chilli, to serve
Tortilla Soup

Using a large knife, carefully scrape the kernels off the corncobs and set aside, reserving the cobs
- Garnish:
- 2 ears fresh corn, husks removed
- 4 or 5 large garlic cloves, peeled
- 1 small onion (about 3 ounces), peeled, trimmed, and quartered
- 1 small jalapeno pepper, trimmed and seeded
- 2 tablespoons corn oil
- 2 corn tortillas, cut into 1-inch squares
- 2 large ripe tomatoes (1 pound), peeled, seeded, and coarsely chopped
- 2 tablespoons tomato paste
- 2 to 3 teaspoons ground cumin
- 2 quarts chicken stock
- Kosher salt and freshly ground black pepper
- 2 corn tortillas
- 1 ripe avocado
- 1 large chicken breast, cooked, boned, and skinned
- 1/2 cup grated Cheddar
- 1/4 cup chopped fresh cilantro leaves

- 2 medium carrots, roughly chopped
- 1 rib celery, roughly chopped
- 1 ⁄2 yellow onion, roughly chopped

- 4 cloves garlic (3 minced, 1 halved)
- 10 oz. squash, such as butternut,
- peeled and cut into 1⁄2" cubes

- 4 large kale leaves, preferably lacinato or cavalo nero,
- stemmed and chopped
- 1 medium waxy-style potato, peeled
- and cut into 1⁄2" cubes
