When I make the tomato sauce I don't measure anything I just put it in and taste test it until I like it

  • Fresh Tomato Sauce:
  • 1/2 cup sweet onion chopped finely
  • 2 or 3 cloves of garlic minced
  • 1/3 to 1/4 cup of olive oil
  • 7 About 7 cups tomatoes ***When in season, the best is fresh san marzano or roma tomatoes chopped, if not in season then use whole tomatoes that you have bottled yourself for the winter***
  • Sea salt, about two teaspoons
  • 6 to 8 leaves of basil chopped
  • 2 tsps of fresh oregano
  • Fresh ground pepper

  • 1 1/2 sticks (3/4 cup) unsalted butter, softened
  • 1 tablespoon finely grated fresh lemon zest
  • 3 3/4 cups confectioners sugar (from a 1-pound package)
  • 1 tablespoon fresh lemon juice
  • 1 1/3 cups pecans (5 ounces), toasted, cooled, and finely chopped
  • Special equipment: 2 (9-inch) round cake pans (2 inches deep)
