Instructions Place spinach in a serving bowl
- 2 cup(s) spinach, baby leaves, packed
- 1/3 cup(s) uncooked orzo
- 1 cup(s) grape tomatoes, or cherry tomatoes, halved
- 2 tsp white wine vinegar
- 1/4 tsp table salt
- 1/4 tsp black pepper
- 1/4 cup(s) crumbled feta cheese
Potatoes and Sausage

Toss to potatoes and sausage together
- 1 1/2 pounds of sausage ( I used a gluten free chicken sausage, but really any uncooked type sausage link will work here) sliced into chunks.
- 2-3 lbs of potatoes, peeled and cut into small chunks
- salt and pepper to taste, optional
Taco Pasta

In a skillet, brown ground beef over medium heat
- 1 pound ground beef
- 1 package (1-1/4 ounces) taco seasoning
- 1 can (15 ounces) tomato sauce
- 1 package (8 ounce) shell macaroni, cooked and drained ( I used a gf brown rice pasta)
- 1 can (4 ounces) chopped green chilies
- 1 1/2 cups shredded cheddar cheese
Reuben Roll - Ups

- 1 tube (13.8) refrigerated pizza crust
- 1 cup sauerkraut, well drained
- 1 tbs. Thousand Island Dressing
- 4 slices corned beef
- 4 slices Swiss cheese, halved

Fajita Seasoning

Cook 3 boneless, skinless chicken breasts that have been cut into strips
- 1 tablespoon cornstarch
- 2 1/2 -3 teaspoons chili powder (vary according to how spicy you like it)
- 1 teaspoon salt
- 1 teaspoon chicken bouillon granules
- 1 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cumin
- Combine ingredients. Set aside.
Mini Apple Crostatas

Heat oven to 425°F. Unroll crust on work surface
