- 2 cups fresh basil leaves , tightly packed
- 3 medium garlic cloves , peeled
- 6 green or red Thai chiles , stemmed (see note)
- 2 tablespoons fish sauce , plus extra for serving (see note)
- 1 tablespoon oyster sauce
- 1 teaspoon white vinegar , plus extra for serving (see note)
- 1 tablespoon sugar , plus extra for serving (see note)
- 1 pound boneless, skinless chicken breast , cut into 2-inch pieces
- 3 medium shallots , peeled and thinly sliced (about 3/4 cup)
- 2 tablespoons vegetable oil
- Red pepper flakes , for serving (see note)

- 6 large egg yolks
- 6 tablespoons sugar, plus more for browning

Preheat the oven to 400° and position racks in the upper and lower thirds
- 1 cup confectioners' sugar
- 1 cup almond flour (see Note)
- 3 large egg whites, at room temperature
- 1/2 cup granulated sugar
- 2 tablespoons water
- 2 or 3 drops red food coloring
- 1/2 cup seedless raspberry jam

Great Indoor Oven Ribs
- For the Rib Rub:
- 2 cups dark brown sugar
- 5 tbsp salt
- 2 tbsp + 1 tsp smoked paprika
- 1 tbsp cayenne
- 2 tbsp garlic powder
- 2 tbsp + 1 tsp ground allspice
- 2 tbsp chili flakes
- 3 tbsp dark chili powder
- Mix ingredients thoroughly by hand
- For the Southern-Style Vinegar-Based Sauce:
- 1 quart cider vinegar
- 1 yellow onion, julienned
- 4 jalapeños, julienned
- 2 tbsp honey
- 1 tbsp brown sugar
- 1 tbsp tomato paste
- 4 tsp salt
- 4 tsp red chili flakes
- 1 tsp black pepper
- For maximum flavor, make this sauce 1 to 2 days before use.
- For the Ribs
- 6-8 lbs baby back ribs, 3 racks, about 2 lbs each
- Fleur de sel (optional)
