In a large skillet, heat the olive oil
- 2 tablespoons extra-virgin olive oil
- 1/4 pound thick-cut bacon, finely chopped
- 1 cup minced shallots (2 large)
- 1 large thyme sprig
- Kosher salt
- 1/3 cup all-purpose flour
- 1/2 cup dry white wine
- 4 cups turkey or chicken stock
- 1/4 teaspoon sweet paprika
- 2 tablespoons unsalted butter

Pandoro is a classic Italian Christmas bread
- LARGE 1 1/2-POUND LOAF
- 1/2 cup + 2 tablespoons (5 ounces) water
- 1/4 cup (1/2 stick, 2 ounces) unsalted butter
- 2 teaspoons vanilla extract
- 1/8 teaspoon lemon oil or 1 teaspoon grated lemon rind
- 2 large eggs
- 1 1/2 teaspoons salt
- 1/3 cup (2 1/4 ounces) granulated sugar
- 3 1/2 cups (15 ounces) King Arthur Unbleached All-Purpose Flour
- 4 teaspoons instant yeast
- 1/4 cup (1 1/2 ounces) golden raisins, coarsely chopped with 1 tablespoon all-purpose flour*
- *This is most easily accomplished in a blender or small food processor.
