- 1 C Ketchup
- 2 T freshly greated horseradish
- 1 T honey
- 1 T Maple Syrup
- 1 T Ancho Chile Powder

White Wine Braised Pork

Season pork with sat and pepper
- 1 boneless pork shoulder about 4.b cut into 4 equal pieces
- Salt and Freshly ground pepper, to taste
- 1 T EVOO
- 2 Yellow Onions, but into 8 wedges each
- 2 Fennel Bulbs, trimmed and cut into 6 wedges each
- 3 celery stalks, cut diagonally into 3/4 inch pieces
- 1 1/2 C white wine
- 2 1/2 C Chicken Broth
- 3 T chopped fresh flat leaf parsley
- 2 Garlic Cloves
- Zest of 1 Lemon
Lentil Soup

Heat oil in a heavy large pot over medium heat
- 2 T EVOO
- 1 medium onion, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 2 garlic cloves, chopped
- Salt and freshly ground black pepper
- 1 (14 1/2 oz) can diced tomatoes
- 1 lb lentils (about 1 1/4 cups)
- 11 cups low sodium chicken broth
- 4-6 fresh thyme sprigs
- 2/3 cup dried pasta
- 1 C shredded parm
Crustless Spinach Quiche

Position a rack in the upper third of the oven, place a baking sheet on the rack and preheat to 450 degrees F
- Extra-virgin olive oil, for greasing and drizzling
- 4 ounces smoked gouda cheese, cut into 4 pieces
- 1 10-ounce package frozen spinach, thawed and squeezed dry
- 2 large eggs plus 2 egg whites
- 1 15-ounce container part-skim ricotta cheese
- 2 tablespoons all-purpose flour
- 1/2 teaspoon freshly grated nutmeg
- 6 to 8 scallions, chopped
- 1 tablespoon grated parmesan cheese
- 1 teaspoon paprika
- 2 heads endive, sliced lengthwise
- 2 tablespoons chopped walnuts
Tomato, Chorizo & Beet Green Soup with Chickpeas

1. Heat the olive oil in a large non-stick skillet over medium heat and add the onions and garlic
- 1 large onion, coarsely chopped
- 1 large clove garlic, minced
- 1 tbsp olive oil
- 3 cups chicken broth
- 1 cup tomato sauce (I used the Classico I had left over from last night's pasta)
- 1 (28oz/ 796 ml) fire roasted tomatoes, (I didn't have any on hand so I used San Marzano, not drained, coarsely chopped
- 2 tsp. dried basil
- 1 tsp. dried oregano
- 1 tsp. ground fennel
- 1 lb/500g or so fresh chorizo sausage (spicy Italian would work too), remove the casing before sauteeing.
- Beet greens (I had one large bunch, coarse stems removed and washed well)
- 1 (19 oz/540ml) can chickpeas (garbanzo beans)
- 1 cup cooked sweet potato, mashed
- Spritz of lime juice at serving
