This stuffing recipe is designed for advance preparation
- 8 cups cubed day-old corn bread (1-inch cubes)
- 2 cups cubed day-old country-style white bread, crusts removed (1-inch cubes)
- 1 1/2 pounds mild Italian pork sausage, casings removed
- 1 to 2 tablespoons olive oil, if needed
- 1 yellow onion, finely chopped
- 1 celery stalk, finely chopped
- Salt and freshly ground pepper, to taste
- 1 cup roasted and peeled chestnuts, quartered
- 1/4 cup chopped mixed fresh herbs, such as sage, rosemary and thyme
- 3 cups low-sodium chicken stock

- 5 garlic cloves
- 5 cups heavy cream
- 3 cups chicken broth
- 3 tablespoons all-purpose flour
- 1 tablespoon salt
- 1/4 teaspoon freshly grated nutmeg
- 1/4 teaspoon freshly ground black pepper
- 3 pounds fennel bulbs (sometimes called anise; about 3 large )
- 4 pounds yellow-fleshed potatoes such as Yukon Gold
- 1 stick (1/2 cup) unsalted butter

- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 cup (1 stick) unsalted butter
- 1 cup sugar
- 1 large egg, lightly beaten
- 2 tablespoons brandy, or milk
- 1/2 teaspoon pure vanilla extract
Royal icing for sugar cookies

In the bowl of an electric mixer fitted with the paddle attachment, combine sugar and meringue powder
- 1 box confectioners' sugar (1 pound)
- 5 tablespoons meringue powder, or 2 large egg whites
- Note: If you're decorating cookies for children, pregnant women, or anyone with compromised immune systems, use meringue powder, found in the baking aisle of most markets, instead of raw egg whites.
Chilean Sea Bass Provençal

This French Riviera favorite cooks in a delicious, flavorful sauce
- 3 tablespoons extra virgin olive oil, plus more for brushing
- 1 baguette, cut on an angle into 1/2-inch thick slices
- 2 1/2 cups thinly sliced yellow or white onion
- 1/2 cup chopped parsley
- 2 tablespoons chopped canned anchovies (optional)
- 1 tablespoon finely chopped thyme
- 3 garlic cloves, finely chopped
- 1/4 teaspoon crushed red pepper flakes
- 1 1/4 pounds plum tomatoes, chopped
- 3/4 cup dry white wine
- 4 (8-ounce) sea bass fillets, each about 1-inch thick

- a trimmed 4 1/2- to 5-pound beef tenderloin roast (about 16 inches long and 3 inches in diameter)
- 1 tablespoon vegetable oil

- 1 tablespoon water
- For the coriander walnut filling:
- 2 cups walnuts
- 4 garlic cloves
- two 3/4-pound bunches spinach
- 3 cups packed fresh coriander sprigs
- 2 cups packed fresh flat-leafed parsley sprigs
- 1 cup fine fresh bread crumbs
- 1/4 cup honey
- 2 large egg whites
- 1 1/2 teaspoons salt
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander seeds

- For the pastry dough:
- 2 1/2 sticks (1 1/4 cups) cold unsalted butter
