Butterscotch, Walnut and Coffee Bread Pudding

1. Disgard crust from bread and cut enough bread into 1/2-inch cubes to measure 6 cups
- 3/4 pound brioche or challah
- 1 cup walnuts
- 1 cup butterscotch chips
- 2 cups milk
- 2 tbsp instant espresso or coffee
- 3 large eggs
- 3/4 cup sugar
- 1/4 tsp salt
- 2 tbsp unsalted butter
Tomato and Basil Quiche

1.Preheat oven to 400 degrees F (200 degrees C)
- 1 tablespoon olive oil
- 1 onion, sliced
- 2 tomatoes, peeled and sliced
- 2 tablespoons all-purpose flour
- 2 teaspoons dried basil
- 3 eggs, beaten
- 1/2 cup milk
- salt and pepper to taste
- 1 (9 inch) unbaked deep dish pie crust
- 1 1/2 cups shredded Colby-Monterey Jack cheese, divided
Carrot Souffle with cornflke topping

Pre-heat oven to 350 degrees Pre-cook carrots
- Souffle:
- 1 lb. carrots cooked
- 3 eggs
- 1/3 cup white sugar
- 1/2 cup butter melted
- 2 Tbsp flour
- 1 tsp baking powder
- Dash of nutmeg
- Dash of cinnamon
- Topping:
- 1/2 cup cornflakes crushed
- 3 Tbsp brown sugar
- 2 Tbsp butter melted
- 1/4 cup chopped nuts (walnuts or pecans)
