Try this delicious Zucchini Pizza recipe
- Optional spices:
- 4 cups grated fresh zucchini
- 2 ounces Parmigiano-Reggiano cheese, finely grated
- 8 ounces low-moisture mozzarella cheese, grated
- 2 eggs, beaten
- 1/2 cup tapioca starch/flour
- 1 tablespoon dried oregano
- 1 1/2 teaspoons dried basil
- 1/2 teaspoon garlic powder
- Optional pizza toppings:
- tomato sauce
- more mozzarella cheese
- gluten free pepperoni
- sautéed mushrooms
- I squeeze the liquid out of grated zucchini by placing it, about 2 cups at a time, in a fine mesh bag (like a nut milk bag) or tea towel, closing the bag or rolling up the towel and twisting it to squeeze out all of the liquid.
Apple Galette with Goat Cheese, Sour Cherry, and Almond Topping

For the galette: Position a rack in the center and preheat the oven to 375 degrees F
- 2 tablespoons (1/4 stick) unsalted butter
- 3 Braeburn apples (1 1/2 pounds), peeled, halved, cored, halves cut into 6 1/2-inch wedges
- 1/8 teaspoon kosher salt
- 1/3 cup sugar
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon ground cinnamon

Beautiful Zucchini Carbonara

Carbonara is a classic pasta sauce made with cream, bacon and Parmesan and is absolutely delicious
- Sea salt and freshly ground black pepper
- 6 medium green and yellow zucchini
- 1 pound penne
- 4 large free-range or organic egg yolks
- 1/2 cup heavy cream
- 2 good handfuls freshly grated Parmesan
- Salt and freshly ground black pepper
- Olive oil
- 12 thick slices pancetta or lean bacon, cut into chunky pieces
- A small bunch fresh thyme, leaves picked and chopped, flowers reserved (if you can get hold of flowering thyme)
- Optional: a few zucchini flowers
