Tomatillo Salsa

This is my mom’s recipe for Roasted Tomatillo Salsa
- 8 tomatillos
- 1 onion cut into eight pieces
- 2 green chili peppers
- 5 cloves of garlic, skin on
- 1 bunch of cilantro, stems removed
- 2 -3 About 2 -3 tsp. honey, but feel free to go with your gut
- Salt & pepper
Fresh Campari Tomato Sauce

1. Pour enough olive oil in a 10″ skillet to cover it by about 1/4 inch
- 16-17 Campari tomatoes
- Extra virgin olive oil
- 4-5 large cloves of garlic, thinly sliced
- 1/3 cup basil, chopped
- 1 dessert spoon of sugar
- Kosher salt
- Freshly ground black pepper
