Lamb moussaka is a Greek dish made of layered eggplant, ground lamb and a thick white sauce
- 3 eggplants
- Kosher salt
- 2 oz. flour
- 3/4 c. vegetable oil
- 2 oz. unsalted butter
- 6 shallots or 2 small onions
- 1 1/2 lb. lean ground lamb
- 1 can chopped tomatoes
- 2 tbsp. finely chopped chives
- 3 oz. red wine
- 2 tsp. lemon juice
- 1/2 tsp. dried sage
- 1/2 tsp. black pepper
- 1/2 tsp. ground allspice
- 3 tbsp. tomato puree
- 3 oz. fresh white breadcrumbs
- 9 oz. ricotta cheese
- 5 egg yolks
- 2 1/4 c. half and half
- 1/2 tsp. salt
- 1/4 tsp. grated nutmeg
- 3 oz. finely grated Parmesan cheese

- Sriracha hot sauce to taste, probably about 4-5 good shakes

Summer Shrimp Salad

This is a simple recipe for a shrimp salad that’s quick and easy and great for a summertime lunch
- 2 ripe avocados
- 2 Persian cucumbers, peeled
- 1 bunch green onions, white and pale green parts only
- 3 green zebra tomatoes
- 1 tbsp. mayonnaise
- 2 tsp. honey mustard
- 3/4 lb. large, uncooked shrimp, peeled and deveined
- 2 tbsp. unsalted butter
- Mache or butter lettuce
- Good quality olive oil and balsamic vinegar
- Salt
- Pepper

- Ingredients (Crust)
- 3/4 c. all purpose flour
- 2/3 c. yellow cornmeal
- 2/3 c. powdered sugar
- 2 tsp. minced orange peel (orange part only)
- 1/4 tsp. salt
- 7 tbsp. unsalted butter, room temperature
- 1 large egg yolk
- 2 tsp. vanilla extract
- Ingredients (Filling)
- 1 c. heavy whipping cream
- 1/2 c. fresh orange juice
- 5 large egg yolks
- 1/4 c. sugar
- 2 tbsp. Grand Marnier
- 1 tbsp. minced orange peel (orange part only)
- 3 oranges, white pith removed
- 1 pint raspberries

- 3 tbsp olive oil
- 14 oz. sweet potatoes, peeled and chopped
- 1.5 oz. butter, unsalted (plus a bit extra to grease ramekins)

- 5 oz. 2% milk
- 3.5 oz. sharp cheddar cheese, shredded
- 2 large egg yolks
- 4 large egg whites
- 8.5 oz. heavy whipping cream

- 2 jars store-bought spaghetti sauce, opened
- 3/4 c. red wine (plus two glasses, set aside … you deserve it)
