Emeril's Banana Bread

Preheat the oven to 350 degrees F
- 10 tablespoons plus 1 teaspoon butter
- 1 cup mashed ripe bananas (about 2 large bananas)
- 1/2 cup sour cream
- 2 large eggs
- 1 1/2 teaspoons vanilla
- 2 cups cake flour
- 3/4 cup plus 2 tablespoons sugar
- 1 teaspoon baking soda
- 3/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup toasted, chopped walnuts or pecans, optional
Liver and Onions

1 Cook bacon in large skillet
- 8 slices cooked bacon, torn in bite sized pieces
- 2 sliced onions (I use a little more)
- 1 lb calf liver
- 1/2 cup flour (more if needed for dredging meat)
- salt and pepper
- 2 -3 dashes red wine vinegar

Prepare the barbecue for medium heat
- 4 ears yellow corn
- Olive oil
- 2 slices applewood-smoked bacon
- 1 stick (4 ounces) salted butter, softened
- 3 sun-dried tomatoes, finely chopped
- 1 shallot, finely chopped
- 1 tablespoon finely chopped flat leaf parsley
- 1 garlic clove, finely chopped
- 1 teaspoon dried oregano
- 1 teaspoon finely chopped fresh thyme
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon dried crushed red pepper
