Roasted Tilapia

- 16 ounces tilapia or other firm fish
- 6 tablespoons olive oil, divided .
- 3 large cloves garlic, crushed, divided
- 1/4 teaspoon sea salt plus more to taste
- Freshly ground black pepper to taste .
- 1 pound grape tomatoes, halved .
- 1/2 cup finely diced red or sweet onion
- 1 teaspoon sugar
- 2 tablespoons fresh chopped parsley
- 4 thick Italian bread or baguette slices,
- sliced on the diagonal
- 1/2 cup shredded basil leaves
