Preheat the oven to 375°F
- 1 cup (2 sticks, 8 ounces) butter
- 1 3/4 cup granulated sugar
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon vanilla
- 1/2 teaspoon almond extract
- 4 large eggs
- 2 1/2 cups King Arthur Unbleached All-Purpose Flour
- 1 cup Hi-maize Fiber, or additional 3/4 cup flour
- 1 cup (8 ounces) milk
- Chocolate Icing
- 1 3/4 cups confectioners' sugar
- 2 tablespoons light corn syrup
- 2 tablespoons hot water
- 1/2 cup bittersweet or semisweet chocolate chips or chunks, melted
- Espresso Icing
- 2 1/4 cup confectioners' sugar or glazing sugar
- 2 tablespoons light corn syrup
- 2 tablespoons hot water
- 1 tablespoon espresso powder

- 1/2 cup all purpose flour
- 1/2 cup whole wheat flour
- 1 ts baking powder
- 1/2 ts baking soda
- 2 ts cinnamon
- 1/2 cup softened butter
- 3/4 cup sugar
- 2 large eggs
- 1 ts vanilla
- 1 cup mashed sweet potatoes
- 1/2 cup rolled oats
- 1/4 cup raisins
- 1/4 cup walnuts
Pumpkin Pie Cake

Preheat oven to 350 degrees
- 1 29 oz can pumpkin puree
- 1 12 oz can evaporated milk
- 3 eggs
- 1 cup white sugar
- 1/2 teaspoon salt
- 4 teaspoons pumpkin pie spice
- 1 18.25 oz box yellow cake mix (can use spice or vanilla)
- 3/4 cup butter
- 1 cup chopped walnuts
Jam Filled Mezzaluna Cookies

In a bowl, whisk the 1 1/2 cups of pastry flour with the 2 tablespoons of granulated sugar
- 1 1/2 cups pastry flour, plus more for dusting

- 4 ounces cream cheese, softened
- 1/4 cup butter, softened

Chicken with Apricot, Tamarind and Chipotle Sauce
