These crunchy biscotti are surprisingly rich-tasting thanks to aged Gouda and chopped walnuts
- 1 envelope active dry yeast (2 1/4 teaspoons)
- 3/4 cup plus 2 tablespoons warm water
- 1 tablespoon sugar
- 2 3/4 cups all-purpose flour, plus more for dusting
- 8 ounces aged Gouda (preferably 4 years), shredded (2 cups)
- 1/2 cup walnuts, finely chopped
- 1 teaspoon kosher salt
- 6 tablespoons unsalted butter, softened

- 1 cup butter, softened

- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups chopped cranberries
- 1/2 cup chopped walnuts, optional
- GLAZE:
- 1/2 teaspoon grated orange zest
- 3 tablespoons orange juice

- 1 tablespoon Asian fish sauce

- 1 1/2 pounds skinless, boneless chicken thighs, cut into 1/2-inch strips, or skinless, boneless breasts, cut into 1 1/2-inch chunks
- Salt and freshly ground pepper
- 1/2 pound shiitake mushrooms, stemmed, caps quartered
- 1 tablespoon very finely chopped fresh ginger
- 2 large garlic cloves, very finely chopped
- 1/2 cup water
- 1 cup frozen baby peas
- Toasted peanuts and cilantro leaves, for garnish
