Houston's Chicago-Style Hot Artichoke Dip

Preheat oven to 375 degrees F
- 1/2 cup (2 ounces) grated Romano cheese
- 1 large clove garlic
- 1 (10 ounce) package frozen chopped spinach, thawed,
- firmly squeezed to remove moisture
- 1 (6 1/4 ounce) jar artichoke hearts, drained, patted dry
- 1 (8 ounce) container soft garlic cream cheese
- 2 large eggs
- 1 cup (4 ounces) shredded mozzarella or Italian mix cheese
- Tortilla chips, sour cream, salsa
POM Velvet Cake

Cake: 1. Preheat oven to 350F
- Cake
- juice from 1 large POM Wonderful pomegranate* or 1/2 cup POM Wonderful 100% Pomegranate Juice
- 2-1/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 3/4 cup unsalted butter at room temperature
- 1-1/2 cups granulated sugar
- 3 large eggs
- 2 teaspoons vanilla extract
- 1 tablespoon apple cider vinegar
- 1 cup half-and-half
- Icing
- 1 cup arils from 1-2 large POM Wonderful pomegranates
- 12 oz. cream cheese at room temperature
- 1/2 cup unsalted butter at room temperature
- 1-1/2 teaspoons vanilla
- 1 lb. confectioner's sugar, sifted
- 1/8 teaspoon salt
Grilled Skirt Steak (Churrasco)

- 2 skirt steaks (about 1 pound each), trimmed of fat and cut in 1/2 crosswise
- Sea salt and fresh ground black pepper
- 1 teaspoon onion powder
- 1 tablespoon white wine vinegar
- 1 tablespoon extra-virgin olive oil
- Vegetable oil cooking spray

- 4 cups flat-leaf parsley (from about 1 large bunch)

- 1/2 to 3/4 cup extra-virgin olive oil
- 1/4 cup red wine vinegar

French Onion Soup

In a large nonaluminum saucepan over medium-low heat, warm the oil
- 2 Tbs. vegetable or olive oil
- 4 large red onions, thinly sliced
- 1 ⁄4 tsp. sugar
- 4 leeks, including tender green portions,
- thinly sliced
- 2 garlic cloves, minced
- 8 cups beef or chicken stock or prepared broth
- 1 ⁄2 cup dry white wine
- 1 bay leaf
- 1 ⁄2 tsp. minced fresh thyme or 1⁄4 tsp.
- dried thyme
- Salt and freshly ground pepper, to taste
- 12 baguette slices, each 1⁄4 inch thick
- 3 ⁄4 cup shredded Gruyère or Comté cheese
