- 4 to 6 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 extra-large eggs
- 1 tablespoon water
- 1 1/4 cups seasoned dry bread crumbs
- 1/2 cup freshly grated Parmesan, plus extra for serving
- Unsalted butter
- Good olive oil
- Salad greens for 6, washed and spun dry
- 1 recipe Lemon Vinaigrette, recipe follows
- 1/4 cup freshly squeezed lemon juice (2 lemons)
- 1/2 cup good olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
Eggplant Montasio-Sugo Restaurant

Preheat oven to 450* Brush two 10 by 15 inch rimmed baking sheets with olive oil and set aside
- 3 T olive oil
- 3 eggs
- 1 cup half and half
- 1/2 cup Pecorino-Romano cheese, divided
- 2 cups Progresso Italian style bread crumbs
- 1 eggplant, peeled and sliced into 1/8 inch thick slices
- 1 cup flour
- 1 cup tomato basil sauce
- 8 ounces provolone, very thinly sliced
- 8 ounces fontina cheese, very thinly sliced
- 24 basil leaves, tough center stems removed
- 8 ounces fresh mozzarella cheese, very thinly sliced
- 2 T extra virgin olive oil
Lobster Cheesy Macaroni Recipe

In top of a double boiler, combine Cheddar, Gruyere and cream cheese and melt until mixture becomes creamy
- 2 cups Cheddar, grated
- 2 cups Gruyere cheese, grated
- 1 cup cream cheese
- 4 cups heavy cream
- 4 cups dry macaroni
- 1 tablespoon olive oil
- 2 shallots, minced
- 2 cloves garlic, minced
- 2 cups lobster meat, chopped
- salt and ground black pepper, to taste
- 1/2 cup roasted red peppers, julienne
- 1/2 cup cilantro, chopped
- Parmesan cheese, to taste
- 1 tablespoon bread crumbs
- 4 tablespoons cilantro, chopped (for garnish)
Olive Garden's House Dressing

Pour the vinegar, lemon juice, and egg into a blender; Allow to rest for 10 minutes
- 1/2 C. distilled white vinegar
- 1 tsp. lemon juice
- 2 Tbs. beaten egg
- 1/3 C. water
- 1/3 C. vegetable oil
- 1/4 C. corn syrup
- 3 Tbs. grated Romano cheese
- 2 Tbs. dry, unflavored pectin
- 1 1/4 tsp. salt
- 1/2 tsp. minced garlic
- 1/4 tsp. dried parsley
- 1 pinch dried oregano
- 1 pinch red pepper flakes
Red Wine Vinaigrette

- 3 tablespoons lemon juice
- 2 teaspoons honey
- 2 teaspoons salt
