Reuben Casserole

Instructions Cook noodles in salted boiling water according to package directions
- 1/2 lb. wide dry noodles
- salt
- 1/2 lb. corned beef
- 1/2 lb. sauerkraut
- 1/2 lb. Swiss cheese or baby Swiss cheese
- 1 can. condensed cream of celery soup
- 1 c. mayonnaise
- 1 Tbsp. ketchup
- 1 1/2 Tbsp. sweet pickle relish
- 1/2 c. +/- cracker crumbs*
- 1 – 2 Tbsp. butter
Chicken Fiesta Bake

Instructions Grease a 9x13" pan with cooking spray
- 1 (16oz) jar medium salsa
- 1/3 cup water
- 1 can corn, undrained
- 1 can black beans, drained & rinsed
- 1 cup of long grain white rice
- 1 tsp kosher salt
- 2-3 chicken breasts, sliced in half width-wise to make 4-6 chicken breasts
- Cajun or Taco Seasoning
- 1/2 cup + medium cheddar cheese
- Green onions, diced
Chicken & Potato Chowder

Melt butter in a large stockpot or Dutch oven over medium heat
- 1/4 cup unsalted butter
- 1 onion, diced
- 3 carrots, peeled and diced
- 2 stalks celery, diced
- 1 teaspoon dried thyme
- 1/4 cup all-purpose flour
- 3 cups chicken broth
- 2 cups milk, or more, as needed
- 2 russet potatoes, peeled and cubed
- 2 cups diced cooked chicken breast
- 1 1/2 cups shredded sharp cheddar cheese
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh parsley leaves
Buffalo Chicken Meatballs

Preheat the oven to 350F. Line a cookie sheet with foil and coat with nonstick spray
- 1 pound lean ground chicken
- 1 egg
- 1/2 cup panko breadcrumbs
- 1 carrot
- 1 stalk celery
- 2 green onions
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1 ounce crumbled blue cheese
- 1/2 cup Frank's Hot Sauce (or your favorite), divided
- 1 tablespoon butter
Chicken Tortilla Soup

Instructions Cook and shred (or cube) chicken
- 1 lb chicken breast cooked and shredded
- 1 15 oz can corn
- 1 1/2 15 oz diced tomatoes drained
- 1 can black beans, drained
- 6 cups chicken stock
- 1/2 tsp. cumin
- 1/2 cup onion chopped optional
- 1 small can diced green chilis
- 2 tsp. minced garlic
- 1/4 tsp. chili powder
- 1 1/2 tsp. salt
- 3/4 tsp. pepper
- monterey jack cheese, shredded
- corn tortillas for chip topping we cut and fried corn tortillas
- avocados cubed
Turkey Cabbage Soup

Put all ingredients into pot & simmer 45+ minutes
- 2 pounds hamburger or turkey
- 2 onions, diced
- 1 C ketchup
- 2 tbsp vinegar
- 1 qt diced tomatoes, with juice
- 1.5 C water
- 2 C kidney beans, with juice
- 1 large head of cabbage
- Cayenne to taste
- Salt & Pepper to taste
- Optional add-ins: celery, carrots
Sandy's Cincy Chili

Crumble raw meat in water
- 1 qt water
- 2 pounds ground beef
- 1 tsp cinnamon
- 1/2 tsp cumin
- 2 large onions, chopped fine
- 1 tsp Worcestershire sauce
- 1 clove garlic
- 2 tbsp chili powder
- 1 tsp black pepper
- 1 tbsp salt
- 1/2 tsp red pepper
- 1.5 tbsp vinegar
- 1.5 tsp allspice
- 3 large bay leaves
- 1 (6oz) can tomato paste
Queso Blanco Dip

Put all ingredients into pot & simmer slowly until melted
- 1/2 lb Land-O-Lakes White American Cheese, cubed
- 1/4 C milk or half/half (adjust to desired consistency)
- 1 can Rotel or regular green chilis
Blueberry Upside Down Cake

In 9 inch square cake pan, combine melted butter and brown sugar;spread evenly on bottom
- 1/4 cup melted butter
- 1/2 cup brown sugar
- 2 cups blueberries (fresh or Frozen)
- 1 tablespoon lemon juice
- 1/2 cup butter
- 3/4 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla
- 1 1/3 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 teaspoon cinnamon (optional)
- 3/4 cup milk
Taco Stuffed Zucchini Boats

Bring a large pot of salted water to boil
- 4 medium (32 ounces) zucchinis, cut in half lengthwise
- 1/2 cup mild salsa
- 1 lb 93% lean ground turkey
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp kosher salt, or to taste
- 1 tsp chili powder
- 1 tsp paprika
- 1/2 tsp oregano
- 1/2 small onion, minced
- 2 tbsp bell pepper, minced
- 4 oz can tomato sauce
- 1/4 cup water
- 1/2 cup reduced fat Mexican blend shredded cheese
- 1/4 cup chopped scallions or cilantro, for topping
