Hashbrown Patty Breakfast Casserole

A yummy breakfast casserole that can be put together at the last minute - hash browns, sausage or ham, onion, bacon
- 4 to 6 hash brown patties, slightly thawed
- 1 cup of shredded cheddar
- 1 cup of cooked crumbled Jimmy Dean sausage or cooked, diced ham
- 1 tablespoon of finely diced yellow onion
- 2 slices of bacon, cooked and chopped
- 1-1/2 cups of milk
- 4 large eggs
- 1/4 teaspoon of Cajun seasoning
- 1/2 teaspoon of kosher salt, or to taste
- 1/2 teaspoon of freshly cracked black pepper, or to taste
Overnight Blueberry French Toast Casserole

1. Spray an 8-x-8 inch casserole dish with nonstick spray
- Casserole
- 1 1/2 loaves French Bread, cut into cubes
- 4 oz. cream cheese
- 1 tablespoon milk
- 1/2 cup powdered sugar
- 1 cup blueberries
- 1 cup milk
- 5 eggs
- 2 teaspoons vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 cup maple syrup
- Syrup
- 1 cup cold water
- 2 tablespoons corn starch
- 1/2 cup sugar
- 1 cup blueberries
Cheesy Bacon Jalapeno Corn Dip

Directions Preheat oven to 400 degrees F
- 8 strips bacon
- 2 (11 oz) cans whole kernel sweet corn, drained
- 1 jalapeno, seeded and minced
- 8 oz cream cheese, softened
- 1 cup mozzarella cheese, shredded
- 1/2 teaspoon salt
- Dash of cayenne pepper
- 1/4 cup fresh basil, chopped
- Parmesan cheese, to taste
Jalapeno Ranch Dip

Cut up Jalapenos, remove seeds, and finely chop
- 1 1/3 c. Mayo
- 1/2 c. buttermilk
- 1/3 c. chopped Jalapeno
- 1/3 c. tomatillo sauce or green chilis
- 1/3 c. chopped cilantro leaf
- Juice from 1/2 a lime
- 1 packet ranch dressing mix
- 1/2 tsp. garlic salt
Crockpot Spinach & Mushroom Lasagna

Heat olive oil in a medium skillet
- 1 × 10 oz Frozen Box of Spinach, thawed and squeezed dry
- 1 Tbsp Olive Oil
- 1 clove Garlic
- 1 Small Onion
- 1 × 8 oz Fresh Mushroom
- 2 Tbsp Dry Red Wine
- 1/2 tsp Salt
- 1 × 8 oz Tomato Sauce
- 1 × 6 oz Tomato Paste
- 2 cups Spaghetti Sauce
- 12 Lasagna Noodles, uncooked
- 1 Egg, slightly beaten
- 1 × 15 oz Ricotta Cheese
- 1/2 cup Grated Parmesan Cheese
- 1/2 C Milk
- 2 Tbsp Parsley Flakes
- 1 dash Fresh Ground Black Pepper
- 2 1/2 cups Mozzarella Cheese, shredded
